    I love your book! One question on the cream cheese, I don't know how professionals get it so stiff? Am I buying the wrong cream cheese or over-whipping. The cream cheese from the super market looks a lot smoother/runnier than what you are using.

    This guy thinks softball stage is 110 degrees!!!! I am from Florida and am well versed in these cakes, that cake looks like nothing I have ever seen in Alabama. He is defiantly not a professional. He blows , literally 🤣🤣🤣🤣

    Hi, so I am new to cake decorating, so how do I make sure that I don't get the crumbs on the spatula? Everytime I frost a cake, I get crumbs on the spatula and then it seems to not completely cover the cake with frosting since there are still cake showing? What am I doing wrong and how lightly do I press the frosting with the spatula?

      That’s what the crumb coat is for at 1:30. If you do a thin layer of frosting and then chill the cake then your final layer of frosting should end up free of crumbs.

      Yes, you can use brioche. Just toast it slightly. We don’t use stale or day old bread for bread pudding in New Orleans. We slightly toast the french bread. I’ve also used croissants. I marinate raisins in rum & keep them in the refrigerator. It makes a difference. Good luck

      We haven't published our Rainbow Cake or Vegan Rainbow Cake recipes, but you can experiment by substituting vegan ingredients and using gel food colourings with our Vanilla Cupcake recipe. xx

      They most likely did 3 cakes and then leveled them. There are very easy tutorials on CZcams on how to level cakes!

      We use separate tins to bake three thin layers of sponge, if there are any domed tops we level these with a sharp serrated knife. xx

    I tried making this recipe and the quantity for the custard and frosting was enough for 2 cakes 🙄. The actual sponge cake as per your recipe wasn't as soft as the other sponge cakes. I tried making this cake twice and on my 2nd attempt i put slightly less than 250g flour and it was better.

      It's called superfine sugar or baker's sugar or bar sugar in the US. It's somewhere between granulated sugar and powdered sugar. xx
