Check you'r valves I think they are the issue for the hard starts at least I had that as a problem

The Sportster was and is a racing bike. The first big twin was 74 cubes (1200). The later big twins is for all you 'Large Dudes' 😉

Gonna wanna be careful running them 2 strokes in the cold. Run em two cold for their jetting they get a little melty. But you already know that.

I don't like owning a 2 stroke but that smell takes me back! There's definitely something about em.

Definitely not setting any land speed records but he's on the top side of the bike so he's not doing awful.

Oh yeah, the 250s are super linear as far as power delivery goes. You can pretty much hold it wide open through all the gears and not get surprise power at any point. The 600s and liter bikes ride like a 250 until they climb on cam. They go from 60-80hp to the ground to double that in about a thousand rpms. It's something else for sure but yeah not exactly the kinda thing you wanna worry about on a first big bike. Why I really like the 650. Linear, controllable, and predictable. But powerful enough that you can still drop a gear and disappear.

She'll run just fine on 87. Has done the whole time I ran one. They're not as high strung as the super sports. She's easy to daily and that's probably the best thing about em.
