Spring Soba Noodle Salad
Welcome the transition of seasons and celebrate Whole Day for Whole Grain with this Spring Soba Noodle Salad. This recipe is balanced, filling and packed with fiber, protein, healthy fats. Also perfect for meal prepping.
Soba noodles are made out of buckwheat, a gluten-free pseudo grain that is considered a whole grain. Be careful when you pick out soba noodles, because most of them use wheat as well. I chose this brand because it is made with 100% buckwheat.
Whole Day for Whole Grain is an annual celebration that takes place on the 3rd Wednesday of March. This health promotion is created by the Whole Grains Council to encourage folks to #samplewholegrains!
I love this noodle salad so much but I was torn about showcasing it for Whole Day for Whole Grain because this soba noodle brand does not meet the 10-11% threshold of fiber grams per one serving. I reached out to the Whole Grain Council for some guidance and learned that each grain has its own fiber threshold.
Buckwheat is at 4.5 gram per serving to be considered whole grain. Although this soba noodle brand had 2g of fiber per serving it is still whole grain, but it's not 100%. Caroline Sluyter of the Whole Grains Council said, "We like to say that when it comes to nutrition it’s important not to make perfect the enemy of good - that it doesn’t have to be 100% whole grain all the time to be beneficial. Every little bit of whole grain makes a difference."

Spring Soba Noodle Salad
Serving Size: 1.5 cups
Total Servings: 4
Salad
2 cups frozen edamame (organic if possible)
8 oz package, soba noodles (100% buckwheat)
5 oz package, baby kale, organic
Dressing
1/4 cup peanut butter
1/4 cup avocado oil
1/4 cup rice wine vinegar
1/4 cup water
1 1/2 tablespoon soy sauce (low sodium if possible or tamari for gluten-free)
1/2 tablespoon minced garlic (1/4 tablespoon if freshly minced)
Directions
1. In a medium to large pot, boil water. Do not add salt to the water. There's plenty of sodium in the dressing.
2. Boil some water in a kettle. Add hot water to frozen edamame in heat-proof container, set aside.
3. In a large bowl, massage baby kale with some oil, set aside.
4. Add entire soba noodles to boiling water in pot, set a timer for 6-8 minutes, depending on stove.
5. In a container, whisk peanut butter, avocado oil, rice wine vinegar and garlic, set aside.
6. Make ice bath to stop soba noodles from cooking and remove excess starch.
7. Add drained soba noodles to ice bath, rinse soba and gently squeeze excess water. Add to bowl with kale.
8. Drain edamame, add to bowl with kale and soba and top with dressing. Using tongs, toss gently and evenly to coat.
9. Serve chilled or at room temp.

    I just made it the first time by soaking it in plain water overnight. I was going to drain and rinse the next day, but since I didn’t have cheese cloth, I just cooked it in the soaking water for 20 min. It cooked down into a cream of wheat like texture. I ate it with fresh butter I made from cream and it was delicious. Is it better to drain the soaking water, or do you loose nutrients?

    Just so you know you can use the stems (and this also goes for hearty stems like rosemary, thyme, sage, and basil) throw into your vegetable stock mix, or stuff inside chicken during roasting or even make a healthy Tea or blend for sauce. Just FYI also growing herbs yourself instead of store bought eliminates the process of losing nutrients from all the time it takes to get from farm to grocery stores so Nutritional value and benefits of them is still present. I recommend you start a herb garden on your kitchen window seal or somewhere they can thrive and always have organic fresh herbs. Happy Healthy Life.👍

    This video had nothing to with health or with cooking! Where are the "3 ways"?? How long the buckwheat cooks is the least important thought about it. Why not share how buckwheat is delicious and high in nutrition? It can be used in so many sweet or savory dishes!

    Thank you for sharing your technique! I just peeled two grapefruits using your method. Before I learned your method, I was losing so much of the fruit with my method. As you mention in the video, I didn't lose a lot of the juice peeling with my hands only ... and I love the juice. Again, thank you very much!

    That looks like a very convenient option to make whole grain bread. Instead of grinding it you can just cook it down till you get a dough like consistency.

    I don't understand why the recipe calls for 1 carrot or 135 grams but you have used 4 carrots? Even on the original recipe with the link you have provided, there is only 1 carrot shown. Is it just me or has anyone else noticed this. They look like average sized carrots not the mini ones. Thank you otherwise!! Looks great.

    Great video, your recipe looks like it is delicious. Weighing everything is a great tip to ensure the consistency of the flavor. The only problem I would have with this recipe is that I don't cook with or eat sugar. I don't use any sugar substitutes, I only use honey occasionally, and on a rare occasion, I use maple syrup. Can I substitute either honey or maple syrup for the sugar?

    Thank you so much for this video! I used to hate grapefruit for its bitterness because I never knew how to properly prepare it. I had to put sugar on it to be able to eat it. I then learned about the cutting method and was amazed how GOOD the fruit tasted with the pith removed! But it was wasteful like you said and messy to do somewhat. I can't wait to try your method because it seems much more natural. I know it will taste good already so I hope to try it tomorrow! <3

      Thanks for watching and asking. You can use the salad spinner for that as well, works best if you have lots of basil! I was going to make pesto this week and I would have put it in the salad spinner but we used too much basil through the week.
