How to Make Cheez-It Crackers / Hitchcock at Home
These are so full of cheesy goodness, they might ruin the store bought version. Warning out of the way, let us dig into this yummy american snack!
Depending on how you look at it, this is a three or five ingredient recipe. You need a block of cheese (ungrated), half a stick of butter (softened), a cup of flour, a big pinch of salt, and a few tablespoons of ice water.
To make the recipe super easy (and not a kitchen workout), skip the rolling pin and use a pasta roller!

    I have a much smaller ice cream churn. Ran for about 15 minutes and I got butter.

    Doesn't the cream have to be room temperature? If it stays cold it won't get thick?

    Wondered that as well , but didn't see any salt added if you wanted salted butter and also didn't see it spread on bread.

    Take food processor and whip the heavy cream, if not reduce the heavy cream to make double cream then whip in the food processor and strain through a cheese cloth, if necessary. To make a spread like magarine add oil. I've thought bout this too, but the food processor would relieve most of the hand mixer work.

      Hi Paulzypaul. I do not start with raw bacon in the dehydrator because the fat is what will spoil first. By cooking the bacon first I can render as much as possible which will help prevent the bacon jerky from going rancid! With beef jerky though I do start with raw beef :)

    Curious why you "cook" the bacon before you put it into the dehydrator.

      Hi Kermin8r, the reason I cook the bacon before putting it in the dehydrator is I want to render the fat as much as possible. This will help with the length of time the finished bacon jerky can hang out at room temperature because the fat is the first part of the meat that will go bad (BUT it never lasts in my house more than a few days!!)

      Hi Connie! I think this batch was in the dehydrator for right at 2 hours, but with all dehydrating (bacon jerky included) the exact time will vary depending on how much moisture is in the food when you start the process. I plan for the longer time and check the bacon every 30 ish minutes until it is the right chewiness

      Hello Hidden2 World, I imagine this would be really yummy but timing might be a bit tricky! I have used maple bacon before and the thing to really pay attention to is how much the sugar caramelizes when baking the bacon before dehydrating. The extra sugars will caramelize and this can happen rather quickly. If you dont catch it and pull the bacon out of the oven the added sugar will burn the bacon which will not make a yummy finished product!

    I’m trying with older style ice cream Machine. To see if it works. As my other devices I have at home either only run for short times, unlike what need them to do. If it’s not that then they bit old, over heating cause being old needing new. See how wood bucket ice cream maker does.

    This was a really cool video and very well done. Trying this tonight! I tend to de-salinate my bacon in a large pan filled with water at a simmer for a few minutes first. So I did that, then instead of letting it dry uncovered in the fridge I just threw it directly onto the dehydrator for maybe 30-45 mins. Then into the oven 10-15 mins 350. Back to the dehydrator and boom, bacon jerky that's not over the top salty either! Awesome. I was considering sous viding the bacon for a day to render more fat, but from what I read, it's probably not worth it, as not enough fat will render compared to like just two minutes on a hot pan.
