Wonderful!! Who knew it took 15 egg yolks! Wow… I don’t think they use that method anymore. Now it’s a few more emulsifiers in place of egg yolks. I rarely see egg yolk in the ingredients anymore. Thanks a lot!

One of my pet peeves is that he does not say whether this is cow or goat milk. It is likely cow milk, but goat milk is becoming more available and goat milk is naturally homogonized. If you are getting goat milk straight from the farm it is pretty creamy already. You could even use natural, raw goat milk as this chef's process pasteurizes the milk. He also uses a blender, I think a really good one, but many home chefs probably have blender which are a little rough on things. Nice video that confirms a number of things I thought were true. It is definitely worth watching.

What Mr. Harris is missing is talking to other generations about Palo Alto. It is a completely different city than it was in the 50s. I haven’t read his book, but I wonder how much we spent on any kind of positive information about Palo Alto. In his whole discussion here, I didn’t hear one word about Hewlett-Packard. If there was one company that did more for this area it was that. Also, he didn’t mention anything about the women at Stanford, especially Mrs. Stanford and also about Mrs.Hoover. Capitalism is another name for opportunistic human nature. It’s in all of us.

A lot of the nutrition is destroyed through pasteurization. Raw milk and eggs are remineralizing. I would always seek out a good source for these ingredients first.

Wow, 15 yolks? That's more than I've ever seen in any ice cream recipe for such a small batch. I only use 3-4 for a 2 quart batch. I make my wife various fresh fruit ice creams using monk fruit sweetener instead of sugar because she has type 1 diabetes, and the high fat content of the cream offsets any sugars in the fruit and doesn't raise her blood glucose. If you've never tried monk fruit you should try it. It's natural and doesn't have the nasty aftertaste of artificial sweeteners.

The other day, I came across this article: "A Potential Blood Test for Chronic Fatigue Syndrome (ME/CFS)?" dated Sept. 9, 2023.
