The main reason why goku and vegeta kept pushing beyond their boundaries is because they didn't have ozaru form, their fathers and other pure blooded saiyan always used their tails whenever in a difficult situation (like vegeta against goku) which is why they never shattered through their limits

From what i know sayans didn't believe in training and thought that genetics alone decided their rank, so Goku and Vegeta actually training Is the maon reason why they are so much stronger

i always assumed it was because saiyans learn and grow exponentially faster the younger they are. Vegeta states that the youngest saiyans are often the ones sent to conquer planets, such as when Kakarot was sent to earth as a baby. And children learn from their parents, when Gohan saw Goku transform into a super saiyan on namek, he too was later able to achieve the same ability despite not being in as precarious a situation as goku was when he first had to transform. similarly, when Goten was just a little kid, his big brother was such a master of the super saiyan technique that Goten didnt even see it as that big of a deal, being able to casually take the form because Gohan was able to so casually do so as well. and in the same vein, Gotenks was easily able to achieve super saiyan 3 after seeing Goku perform it only once, which is something Gohan was never able to do because by that point he was well past his prime and was starting to take a step back from martial arts anyway.
