Hi! I'm Beth. Thanks for stopping by! I LOVE plants!! I love growing them, I love cooking them, and I love eating them. On this channel I'll be sharing recipes and meal ideas with plenty of plants.
Potato Salad
This potato salad, perfect for picnics and barbecues, is delicious, but without the fat from mayo. The bulk of the sauce comes from plant based yogurt and chickpeas. I used yellow potatoes here, but red would also work. I don't bother peeling the potatoes, but you can if you like. For the sauce I used miso paste to add saltiness, but you could just use salt. I also used black salt (which is actually pink), which adds an egg flavor, but it's totally optional. Add any veggies you want. I just added green/spring onion, but you could also add other traditional potato salad veggies like celery and pickles or make it your own with veggies like grated carrots or diced red bell pepper. I garnished this potato salad with chopped chives and powdered paprika. This recipe would serve about 4 people.
Step 1: Cook the potatoes
~1.5 lbs potatoes
~1/2T salt
Water to cover potatoes by about 1”
Scrub (or peel) and chop the potatoes to about 1” square.
Add to a pan with water and salt.
Turn heat on high.
Put lid on for about 5 mins.
Remove lid and bring potatoes to a boil.
Reduce heat to a simmer for about 20 mins or until the potatoes are cooked to your liking.
Step 2: Make sauce
1/2 cup chickpeas
1/2 cup yogurt (I used soy)
1-2t dijon mustard
1-2t miso paste (or sub for salt to taste)
1t lemon juice
1/4t black salt (which is actually pink; OPTIONAL)
1/4t black pepper (or to taste)
Salt (to taste if desired)
~1T fresh dill
Blend all ingredients except dill until smooth.
Add dill to blender and pulse blender a few times.
Step 3: Chop any veggies you want to add
Step 4: Mix together and serve

PB powder is peanut butter powder. You could use regular peanut butter here too. Or even miss it out. Avocado would be good too. Are you not a banana fan? My husband isn't either. He actually couldn't taste the banana in this though.

Thanks so much for your comment! I'm a HUGE believer in the power of plants in helping our bodies and minds heal and thrive. It's great that you're proactively taking care of your health by eating well. I had to google BLV - I'd never heard of that before, so thanks for that. This recipe is really delicious! You can make a batch of it and keep it in the fridge for a few days and it also freezes well. I hope you like it!!
I really want to make this but it looks like it takes awhile to make. I don't think I've got the energy.
Thanks for your feedback Janna. Making the actual cake doesn't take that long (apart from the 45 mins in the oven). There are also a few shortcuts, e.g., buy oat flour rather than blend the oats (although that doesn't take much time at all), buy grated carrots and chopped walnuts.

I have oats like this all the time - but not with beans! I’ll add some next time.
You should totally try it Heather. I find that adding beans keeps me fuller for longer. If you're not used to eating lots of legumes, start off with just a tablespoon or two so your body can adjust. And if you don't wanna bother blending them, you can just mash them up with a fork before adding them. I've been making oatmeal like this for a while now and my husband has no idea that there are beans in there! Sometimes I use lentils - whatever I have in the fridge.
Tried the hummus- pretty good. I didn't have almond butter and used peanut butter instead. Also added some honey and Nutella. My 2yr old was eating it up with a spoon! 😊

I might try the hummus. I love hummus, but I'm not sure I'd put it on sweet potato.
My sister agrees with you! She thinks sweet potatoes and chocolate hummus don't go together. I love it though! If you do make it, I highly recommend adding more maple syrup (or any other sweetener). I add very little because, like I said in the description box, I get the sweetness from the sweet potato and fruit, rather than added sweetener. Thanks for watching my video!!
