    Truly weird statement "remove the fat cause the seasoning doesn't penetrate." But, he layers oil on the ribs. Fats, oils, grease, lard are all lipids. He removed one, and added one back in. Curious method.

    Rub doesn't stick to fat. Coat with olive oil. Sprinkle on rub. Olive oil is fat. Dude c'mon, you can do better than that. BTW, ribs are better smoked vs grilled.

    I personally do not believe those ribs temp at 207°. I see very minimal to no pullback on the bone even after he wrapped them. Which is probably the reason he did not take a bite out of them. He knows those ribs were very tight and would not have that clean bite through. Just my opinion.

    I think you have a great opportunity to sell private snail kits. I was looking at the tiny sails in my garden thinking this would be a great source of sustainable protein. By Growing our own snails we can can control what they are eating along the whole way. This would be a great business opportunity to present to shark tank. I can work on the idea with you?     I am joining the heliciculture movement! I am an agribusiness major, and in looking for a niche market, I found this, I will most likely be up and running in a month or less, God willing. There is a lot of red tape to get through that's for sure, especially out here in California! I honestly feel that escargot just hasn't been properly marketed in the US. I aim to change that, my daughter is a marketing major and we are going to do our best to supply the West Coast with the freshest, sustainably sourced, organic, California-grown Escargot and Caviar. I've only been able to find one other gentleman in SoCal who is foraging and processing on a small scale. @peconic Escargot, you absolutely ROCK, thank you for paving the way, you inspired me to get it going out here on the West Coast, I am in Northern Cali, Sacramento right now. I am most likely buying land near the coast, I'm certain my snails will thrive in the moist conditions and mild temperatures, Sacramento is an oven in the summer months.     This dude is a professional. However, I will never pull the membrane off of my ribs. I've tried it and it just doesn't work in a real at home BBQ. Remember competition ribs are not the same at outdoor, backyard ribs.
