    Healthy tacos recipe Ingredients: - 1 bag of tacos - 500g chicken breasts (cut into strips) - Salt and pepper to taste - 1 ripe avocados (diced) - 1 cup cream cheese - 2 tomatoes (diced) - 1/2 head of cabbage (shredded) - 1 cucumber (diced) - 2 tablespoons olive oil - 1 tablespoon lemon juice - 1 tbsp dried parsley - 1 tbsp dried thyme Instructions: - Season the chicken strips with salt, spices and pepper. - Heat the oil in a deep pan over medium heat. - Fry the chicken strips until golden brown and cooked through. Remove and drain on paper towels. - In a large bowl, combine the diced tomatoes, shredded cabbage, and diced cucumber. - Drizzle with olive oil and lemon juice. - Season with salt and pepper, then toss to combine. - Preheat the oven to 350°F (175°C). - Spread the tacos on a baking sheet or oven-safe platter. - Place in the oven and bake about 5-7 minutes. - Add the salad, then add the fried chicken. - Add diced avocado and cream cheese on top.     Veggie Gratin recipe Ingredients: - 500 g potatoes - 200g zucchini - 150g mushrooms - 1 cup heavy cream - Salt and freshly ground black pepper, to taste - 1 grated cheese - 2 tablespoons olive oil - 1 tablespoon dried thyme, parsley, oregano or any other spices - 1 tablespoon sriracha Instructions: -Preheat your oven to 375°F (190°C). -Peel the potatoes, zucchini and mushrooms and slice them thinly. -In a medium saucepan, combine the heavy cream,sriracha,oregano,thyme,parsley , salt, and pepper. -Heat over medium heat until the mixture is warm but not boiling. -Arrange a layer of potato slices, then a layer of zucchini and then a layer of mushrooms till you finish all the vegetables. -Pour the cream mixture over the veggies, and sprinkle some of the grated cheese and olive oil. -Cover the dish with aluminum foil and bake in the preheated oven for about 45 minutes. -Then, remove the foil and bake for an additional 30-35 minutes, or until the top is golden brown and the veggies are tender when pierced with a fork. -Let the gratin cool for about 10 minutes before serving to allow the cream to thicken slightly. Enjoy your delicious veggies gratin!

    Fresh Salad with Baked Salmon Recipe Ingredients: - 2 cups mixed salad greens - 1 cups lettuce, chopped (e.g., romaine or iceberg) - 1 cup tomatoes, diced - 1 cucumber, sliced - 1 avocado, diced - 250 g. salmon - 3 tablespoons olive oil - 1 tablespoon lemon juice - 1 tablespoon sriracha - 1 teaspoon soy sauce - Salt and pepper to taste Instructions: - Preheat your oven to 400°F (200°C). - Place the salmon fillet on a baking sheet. - In a small bowl mix the olive oil, lemon juice, soy sauce, sriracha, salt and pepper . - Spread the sauce over the salmon. - Bake for 12-15 minutes, or until the salmon is cooked through. - Let the salmon cool slightly. - In a large salad bowl, combine the mixed salad greens and chopped lettuce. - Add the tomatoes, cucumber slices, avocado, and baked salmon. - In a small bowl, combine the olive oil, lemon juice, your favorite spices, salt, and pepper. - Whisk or shake until well combined. - Drizzle the dressing over the salad. - Toss gently to combine, ensuring all the ingredients are coated with the dressing.     Easy and healthy lunch recipe 4 chicken breasts or thigh pinch salt and pepper 2 tsp olive oil 1 cup light thickened cream ½ cup water ½ cup grated parmesan cheese ½ tsp sriracha 200g tomatoes, chopped 1 tsp dried oregano 1 tsp dried parsley ½ tsp chilli flakes (optional) 1 zucchini sliced mashed potatoes 2. Season the chicken with salt and pepper. 3. Heat oil in a large frypan over medium-high heat. 4. Add the chicken and cook for about 5 minutes each side, or until golden brown. Transfer the chicken to a plate. 6. Add zucchini and cook for a further 5 minutes. Then, add the tomatoes and cook for another 2 minutes. 7. Stir in cream, water, pinch of parmesan cheese,parsley , oregano, sriracha, pinch chilli flakes (optional) 8. Return the chicken to the sauce pan. Bring the sauce to a simmer, then reduce the heat to medium-low. Cook for a further 5-7 or so minutes until the chicken is cooked through. 10. Serve over mashed potatoes and top with fresh basil and extra parmesan.

    Strawberry crumble recipe Ingredients: 1 heaped cup chopped strawberries 1/2 cup blueberries or any other fruits 1 tsp maple syrup or honey 1/2 tsp vanilla extract 1/2 tsp cocoa powder For the crumble-1/4 cup rolled oats 1/2 tsp cinnamon 1 tsp chia seeds 2 tsp brown sugar 1.5 tbsp softened butter Instructions: Preheat oven to 350 degrees & spray an oven safe dish with oil. Wash & chop strawberries and blueberries. Transfer the fruits to the oven safe dish. Mix the crumble ingredients & mix in the butter with a fork or your hands making sure the butter is incorporated. Bake for 20-25 min until top is golden brown. I ate mine with plain yogurt.

    Creamy pasta with halloumi recipe Ingredients: - 200g pasta (your choice, such as fettuccine or penne) - 200g mushrooms, sliced (button, cremini, or your favorite variety) - 100g halloumi cheese, diced - 2 tablespoons olive oil - 100g cream cheese - 1/2 cup heavy cream - 1/2 cup grated Parmesan cheese - 1/2 teaspoon dried thyme - 1/2 teaspoon dried oregano - Salt and pepper to taste Instructions: - Bring a large pot of salted water to a boil. - Add the pasta and cook according to the package instructions until al dente. - Drain the pasta, reserving 1/2 cup of pasta water, and set aside. - Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. - Add the diced mushrooms and fry for 2-3 minutes on each side until golden brown and crispy. - Add the sliced halloumi and cook for about 5-7 minutes until all ingredients are browned and tender. - Stir in the dried thyme and oregano, and season with salt and pepper. - Lower the heat to medium-low and add the cream cheese to the skillet, stirring until melted and well combined with the mushrooms. - Pour in the heavy cream, stirring until the mixture is smooth and creamy. - Stir in the grated Parmesan cheese, allowing it to melt into the sauce. - Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. - If the sauce is too thick, add a little of the reserved pasta water until you reach the desired consistency. - Taste and adjust seasoning with more salt and pepper if needed. - Serve immediately and enjoy!

    Avocado toast with halloumi recipe Ingredients: - 1 slice of your favorite bread (sourdough or whole grain recommended) - 1 tablespoon cream cheese - 1/2 ripe avocado, sliced - 1/2 medium tomato, sliced - 50g halloumi cheese, sliced - 1 egg - 1/2 tablespoon vinegar (for poaching egg) - Olive oil for frying - Salt and pepper to taste - Optional: your favorite spices Instructions: - Toast the bread slice to your desired level of crispiness. - Heat a non-stick skillet over medium heat and add a small amount of olive oil. - Add the halloumi slices and fry for 2-3 minutes on each side, or until golden brown and crispy. Add your favorite spices and salt. - Fill a medium saucepan with water and bring to a gentle simmer. - Add the vinegar to the water. - Crack the egg into a small bowl or ramekin. - Create a gentle whirlpool in the water with a spoon and carefully drop the egg into the center of the whirlpool. - Poach the egg for about 3-4 minutes, or until the white is set but the yolk is still runny. - Remove the egg with a slotted spoon and drain on a paper towel. - Spread a generous layer of cream cheese on the toasted bread. - Place the tomato slices on top of the cream cheese. - Add a layer of avocado on top of the tomato - Add the fried halloumi slices on top of the tomatoes. - Carefully place the poached egg on top of the toast. - Season with a little more salt, spices and pepper to taste. - Serve immediately and enjoy!

    Apple cake recipe Ingredients: - 2 cups all-purpose flour - 1 cup granulated sugar - 1 teaspoon cocoa powder - 1 teaspoon baking powder - 1/2 teaspoon salt - 1 teaspoon ground cinnamon - 2 large eggs - 1 teaspoon vanilla extract - 1 cup milk - 1 cup yogurt - 2 cups peeled, cored, and finely chopped apples (about 2-3 medium apples) Instructions: - Preheat your oven to 350°F (175°C). - In a large bowl, sift together the flour, cocoa powder, baking powder and salt. Mix well. - In another bowl, whisk together the eggs, vanilla extract, yogurt, sugar and milk until well combined. - Gradually add the wet ingredients to the dry ingredients, mixing until just combined. -Pour half of the batter into the prepared baking pan and spread it out evenly. -Arrange half of the apple slices over the batter. -Pour the remaining batter over the apple layer and spread it evenly. -Arrange the remaining apple slices on top. - Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. - Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.     Creamy pasta with salmon and vegetables recipe Ingredients: - 300g pasta - 200g salmon fillets (skinless, boneless) - 200g tomatoes, diced - 200g broccoli florets - 200g cream cheese - 2 tbsp olive oil - 1 lemon (juice and zest) - 100g grated Parmesan cheese - Salt and pepper to taste Instructions: -Preheat your oven to 200°C (400°F). - Cut the salmon into bite-sized pieces. - Cut the tomatoes in small pieces. - Cut the broccoli into small florets. - Place the salmon pieces, tomatoes, and broccoli florets in a baking bowl. - Drizzle with olive oil, and season with salt and pepper. - Toss to coat everything evenly with the oil and seasoning. - Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and the vegetables are tender. - While the salmon and vegetables are baking, cook the pasta according to package instructions until al dente. - Drain the pasta and set aside. - Once the salmon and vegetables are done,add the cream cheese and lemon juice and mix gently until the cream cheese is melted and everything is well combined. - Add the cooked pasta to the bowl. - Sprinkle the grated Parmesan cheese evenly over the top. - Serve warm and enjoy!

    Chia Pudding Tiramisu Recipe Ingredients: - 1 cup yogurt - 1/4 cup chia seeds - 1-2 tablespoons maple syrup or honey (to taste) - 1-2 tablespoons muesli - 1/2 cup strong brewed coffee, cooled - 1/4 cup blueberries or any other desired fruit -1 package (about 7 ounces) of ladyfingers (savoiardi) Instructions: - In a medium bowl, combine the yogurt, chia seeds, maple syrup or honey. Stir well to combine. - Let the mixture sit for 10 minutes, then stir again to prevent the chia seeds from clumping. - Cover the bowl and refrigerate for at least 4 hours or overnight until the chia seeds have absorbed the liquid and the mixture has thickened to a pudding-like consistency. - Brew a strong cup of coffee and allow it to cool to room temperature. - Mix the cooled coffee with the maple syrup or honey. -Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soaked.
