Korean Food Recipe_Vegan/Vegetarian Rolls 한식 레시피_쌈밥
Ssam Bap(Leaf Wraps and Rice, 쌈밥), which is Korean rice wrapped in leafy vegetables, often served with a variety of fillings and condiments(such as pork or beef). Here's a recipe for making vegan version of Ssam Bap.

Ingredients:
Cooked rice
Any kinds of leafy vegetables(such as cabbage leaves, fischer’s ragwort)
100g mashed tofu
50g mushroom
1/2 onion
1 tablespoon minced garlic
50g chopped green onion
2 tablespoons soybean paste
1 tablespoon red chili paste
Sesame oil
Sesame seed
Salt to taste
Instructions
Prepare the leaves:
Wash the leafy vegetables thoroughly.
Thin leaves: blanch for 30 seconds and squeeze out the moisture.
Thick leaves: boil for about 3-5 minutes and drain the moisture using a colander.
Prepare the rice:
Add a little bit of salt, sesame oil and sesame seed to the cooked rice and mix well.
Prepare the sauce:
- 1 tablespoon of minced garlic and 50g of chopped green onion to the pot. Stir-fry them briefly.
- Add 50g of mushrooms, 1/2 onion and mahed tofu to the same pot, then stir-fry them for 2-3 minutes.
- Add 2 tablespoons of soybean paste and 1 tablespoon of red chili paste, then stir-fry them briefly as well.
- Add 50g of water, then reduce the heat to low and let it simmer for about 15 minutes, or until the vegetables are tender and the sauce has thickened.
Assemble the Ssam Bap(Leaf Wraps and Rice):
- Take a leafy vegetable and place a small amount of rice in the center.
- Add a bit of sauce on top of the rice.
- Wrap the leaf around the rice and creating a neat little bundle.
Serve:
- Arrange the wrapped ssam bap on a platter and serve with extra sauce on the side.
- Repeat with the remaining ingredients, making as many ssambap wraps as desired.
These are typically eaten with your hands, so don't be afraid to get a little messy.

잘 지은 밥
잎채소 아무거나(양배추, 곰취나물 등)
으깬두부 100g
버섯 50g
양파 1/2개
다진 마늘 1스푼
다진 파 50g
된장 2스푼
고추장 1스푼
참기름
통깨

만드는 법
쌈채소 준비하기:
쌈채소들을 물에 잘 씻어줍니다.
얇은 잎: 30초 정도 살짝 데친 뒤 물기를 꼭 짜줍니다.
두꺼운 잎: 3-5분간 끓인 뒤 체에 받쳐 물기를 빼줍니다.
밥 준비하기:
잘 지은 밥에 소금, 참기름, 통깨를 살짝 더하고 잘 섞어줍니다.
강된장(소스) 준비하기:
- 다진마늘 1스푼과 다진파 50g을 팬에 넣고 기름에 살짝 볶아줍니다.
- 버섯 50g, 양파 1/2개, 으깬두부를 같은 팬에 추가하여 2-3분간 더 볶아줍니다.
- 된장 2스푼과 고추장 1스푼을 더하고 살짝 더 볶아줍니다.
- 물 50g을 더하고 소스가 끓으면 약불로 줄인 뒤 15분간 더 졸여줍니다. (채소들이 부드러워지고 소스가 걸쭉해질때까지 졸여주세요)
쌈 싸기:
- 데친 쌈 위에 밥을 조금 얹습니다.
- 강된장을 밥 위에 조금 올려줍니다.
- 밥을 감싸면서 쌈 주머니를 깔끔하게 잘 만들어줍니다.
상 차리기:
쌈을 여러개 만든 뒤 추가로 찍어 먹을 강된장과 함께 그릇에 예쁘게 담아보세요.
생각보다 만들기 쉽고 재미(?)있죠?
기호에 따라 다른 고기나 재료들을 추가하여 맛있게 만들어 드세요^^
