2024 #everybitcountschallenge | Days 10-17
Things have been crazy around here like usual! We are trying to find a new normal while fitting in gardening and preserving in every waking moment it seems like. Then comes the editing of the week long video. This was actually a 2 hour, 45 minute video cut down to approximately 31 minutes. I want you to see what I do but I don't want to bore you to death. I hope you enjoy watching! I loved some of the new things I tried this week. I can't wait to get them on my shelves in the larder.

Instant Hummus In A Jar Recipe:
Prep your chickpeas/garbanzo beans by soaking overnight. Alternatively you can bring your chickpeas to a boil for 2 minutes, turn off the heat, and allow them to sit for an hour. Drain off the water and rinse well. Add the chickpeas back to the pot with 1 quart of water per pound of chickpeas. For 6 pints you will need 1 pound of chickpeas. I did 12 pints, so I used 2 pounds of chickpeas. Divide the chickpeas evenly among hot, clean jars. Add in your flavorings as listed below, and top off with hot water to 1 inch of headspace. Debubble, adjust headspace, and add lids fingertip tight. Process pints in a pressure canner for 75 minutes.
To Serve:
Drain off some of the liquid and set it aside. Add the contents of the jar to a blender or food processor with 2 tbsp of olive oil. Add liquid until the desired consistency is reached. If you choose to omit the sesame seeds during canning, add 1/4 cup of toasted sesame seeds now or 2 tbsp tahini.
Roasted Garlic Hummus
Per Pint:
4 cloves roasted garlic
1/4 cup sesame seeds
3 tbsp lemon juice
1/4 tsp salt
Roasted Red Pepper Hummus
Per Pint:
4 cloves garlic
1/2 roasted red pepper or 2 slices
1/4 cup sesame seeds
3 tbsp lemon juice
1/4 tsp salt
1/4 tsp smoked paprika
Cajun Red Beans and Sausage

Oh my goodness! I never dreamed I would love the results of using these maps. It made getting my garden beds up and running so easy. Now, all I have to do is control the bugs and continue to harvest.     Penny you've been a busy little bee!!!! Several things I have down on my list to do- that hummus is a great idea! I canned Garbanzo beans for the first time last week but love this idea! I have been looking for a good fermented granola and will try your recipe- the last 2 I have tried just didn't taste very good or the texture was really weird. Cucumber dressing mix- red bean soup--- gosh...this was filled with new and exciting goodness! Thanks! Your end of the week table is awesome! I am doing much smaller little bits for sure but it will make a difference !

      Hi Mary! I am so happy that you love so many of my ideas this week. I was trying to do things that would be different but that my family would definitely enjoy. I love the idea of the hummus jars because I can use them for a Community Class that I teach or Ladies coffee group. They will just come in very handy. Just because my end is a week table is pretty full. does not mean that what you are doing is not a great help for your pantry as well. Because we know… Every bit counts!       Thanks, Brenda! I was really surprised how many times I used peppers out of the freezer last year. I would probably be out of them except that I have a couple bags of peppers that were not fire roasted or smoked. Who wants to use those? 🤦‍♀️🤣 Poor things are just gonna sit there forever unless I take them out and roast them. I’m not sure how that would work. I might have to try it.     I want to make that ketchup and fermented granola for sure. I just ordered some seeds for plum tomatoes for next year from Hudson Valley Seeds called Magic Bullet Tomatoes based on a referral from a new site I'm following from this challenge. She said they were so very prolific and extremely tasty. Next year I'll find out if they work for me, too.I also love your herb combinations for seasoning. Have you ever tried to grow cumin? I got seeds last year but was unable to sprout any. Seems it is an herb that so many people use regularly, especially in Mexican dishes. Great video!!!! So happy I follow you.

      Hi Mary! The ketchup taste so good! I will definitely be making more. I figure if nothing else in those small jars they would work great in a gift basket. Those tomatoes sound great! I said I was disappointed with the peach tomatoes, but I have found that if I let them go orange before I pick them they are so sweet and yummy. They do not do well to cook and process though. That’s why I’ve been using them for my pizza tomatoes. I’ve never tried to grow cumin. I’m not even sure what the plant looks like or how it works. I know that you grind the seeds to make the cumin powder, but that’s all I know. Maybe I’ll have to check that out. Thank you so much for watching and for your kind words!     Just a suggestion you could of hung your tee shirts on hangers and hung them on the bar for the shower curtain. I have a clothes dryer rack which I use all the time for clothes that Indo not want to shrink.

      Honestly, Patricia, I was so busy doing some canning that I just didn’t even care. We were supposed to get the part the next morning so I didn’t worry about it and it ended up being two mornings but by then they were pretty much dry. That’s a great idea, though.     I really appreciate your effort in participating in this challenge. I am enjoying your video very much. I am glad you did the red beans in this, I didn’t even think about canning the red beans and sausage as a meal. I have been canning red beans for this meal for a while, this would be so much better. We have red beans and rice about once a month and this would be so convenient for me. I want to try canning the chicken peas for hummus, I just haven’t been able to find them in my local store.

    Hi Penny!👋👋 Oh I hear your voice and see you and it makes me smile.😊 I'm watching your video as I write my to do list for next week and fold laundry for ironing later. We have no water in my area just now due to a burst pipe but we're prepared and have bottled water and our water butts in the garden to deal with necessary things.🤣 It is not a sunny day but not too cold with a slight breeze which us good as Belle tripped Jon up when carrying a bucket of water in the cellar so drying the floor that way. (Little gap here as Jon, myself and our youngest have been out prepping winter wood, I put a post on IG just now.) Planning the garden then the preserving is definitely the way to go. I hope your sinuses have cleared up?x All your tomatoes and peppers look deelish! Love the old school vacuum sealer. Your dry mixes were fab and will look at the recipes. I'm still waiting to go foraging for blackberries, they seem late this year. Wonderful collection of goodies for the pantry. Have a lovely Sunday, friend.x❤

      Good morning Louise! I am so sorry about your water, but I am so thrilled that you are prepared! Isn’t that a good feeling? As you describe your day and the breeze and you splitting wood, I can just feel, here and smell all of the things going on around your farm. Including your fresh laundry. I love it when you tell me about things in your life. One of these days I am coming to visit you. Like it or not! 😜 Thank you for all the kind words about my produce. They have been very lovely this year. I think they like the new place that I have planted them. The plants are so big. I struggle with keeping them tied up. I think some animals are getting in there at night and kind of pulling them down to reach in and get the tomatoes. So I’m gonna have to find a better way to keep them tied up. I hope the blackberries come soon. I’m sure you will make all kinds of yummy things to put on the shelves. Enjoy the rest of your day as you wait for your water and finish your laundry.     Yes, this makes sense. It is what we spend overall in prepping for a garden and larder as there is definitely cost for that. I am in year 3-4 and I will say that last year was the first year where my grocery bills went down noticeably. This year even more so. I budget $200/month for food in its entirety. Because of what I have in my kitchen, downstairs basement pantry, dehydrated foods and canned meats I spend an average of about $40/month on produce and little assorted fill-ins. I don't have good luck with growing a garden but I am great at locating great food buys so I can a lot of inexpensive food items and feel really good about that. I know that I don't have to be a master at everything ...... just some things. I get great satisfaction in learning and expanding my prepping knowledge in all its forms.

    First visit. Great and enjoyable video--Thanks! I would recommend (the K.A. manual does too!) moving the carriage (with the blade) back to the far end of the unit, REMOVING the blades, and THEN removing the core. Much safer and more room. Happy cooking! ⚠🤔🙂😇

      Yes! I’m sure you could. You will probably just need to put them in the oven to roast them on a pan since they will be very wet when you thaw them out. But I would sure give it a try! Maybe put in a few extra of the tomatillos, since they will be so shriveled. Good luck with that. Let me know how it turned out. 😁

    I use Usnea/Vodka every time I get sick with a cold. My SIL told me it was just the vodka that helped me stop coughing and go to sleep. He has constant congestion from allergies and a couple years ago he hadn't slept in 3 nights due to coughing. He sheepishly asked if he could try the dirty looking tangle of hair med I used. LOL He took it once and was asleep with NO coughing and has used it when desperate for relief ever since. I've given a teaspoon to my 8 yo grandson and it worked. My family has heard me say everything in my garden is edible and helps our bodies some way. The kids get a bug bite and ask me to show them what to pick and rub on it to stop itching. They love the stevia and the mint leaves. They have learned to identify so many good herbs and every morning in the spring, my littlest brings me a few dandelion flowers for making 'honey tea'. They know not to eat anything that I haven't confirmed identity for them. They know exactly which to pick or rub for mosquito bites. Once I heard my then 5 yo tell his dad - that's not a dandelion when Dad spotted some yellow daisy like flowers, After that I knew he had sure learned my safety rules. My new grandson-in-law used to tease me about my 'brews' but now he asked for certain ones for friends that need some help and for his grandmother. I'm so happy you showed this woman in your video. I think I really like her! Now to update my book collections. After every storm we get, I collect Usnea from the fallen branches to make my tincture. It grows like a weed on the oak trees around here. I just made my first batch of elderberry tincture and does it taste delicious! Next comes jelly and cough med for the baby.       Oh my goodness Mary, I had no idea it grew on trees like that in your area. I so wish I had something like that that grew here. I’m going to have to buy some instead. What a blessing you have right there. I understand the whole “Family not wanting to try the weird stuff” thing. But eventually they do come around don’t they? 😁 don’t you just love it when your little kids show such interest in foraging. My granddaughter is so good at it as well. I love going out with her and her telling me what things are and wanting to pick certain things but we have the same rule that you don’t put anything in your mouth unless you ask grandma first. thank you so much for sharing the story.     I had a wonderful day yesterday. My oldest daughter and I drove down to Trader Joe's off Ward Parkway but I keep praying they will open one in the KC Northland. We each got a few things and then she told me about the fact that we have grain millers in the KC area. I had no idea. She told me about one and we drove to the warehouse. We saw one of the millers outside loading up his car with sacks of flour and asked if they have a store area. They don't but you can order online to have things shipped or you can pick up your order. He showed us around and I was able to get a 10 pound bag of organic Spelt berries. My daughter got a bag of all purpose flour and one of high protein flour. The company is Marion Milling and they have 2 huge stone ground mills on the property and only get supplies from local farmers who grow certified organic. They just ran out of Rye but will be getting it in soon and will give me a call. Anyway, today I took my daughter's flours and put them in different amounts in paper bags and then vacuum sealed each one. I love the fact that they were milled just the day before. So, I had fun labeling and returning them to my daughter. It's fun finding such useful companies and trying new things to use and prep.

    You are doing great! My son, and one of my daughters, gave me a large box of mushrooms. My son had bought baby bellas and my daughter white button mushrooms. Both had been in their refrigerators and there was moisture in the box. They were going to throw them away so I asked if I could have them. Granted there were probably 3-4 in each box that was too "gone" but most of the rest were just fine. I used a paper towel to clean off any dirt or debris and did slice off any part that was not good enough. I got myself a smaller dehydrator because I have an extremely large one but don't want to drag it out with just a small amount of produce. It didn't take very long to slice the mushrooms and lay them in a single layer and filled up 4 trays. I have the temp at 113 degrees for 6 hours and will leave them in if that isn't long enough. - I also split 2 large whole ribeye roasts (about 12 pounds each) with my daughter. The butcher sliced them 1" thick and wrapped each one. We decided to use my vacuum sealer and prepared each steak so that it can last a long time in the freezer. It's lovely not to have to worry about freezer burn.

    Love all the new storage shelves in your cellar! My heart goes out to you in hearing your son's family is moving into a new apartment. Kudos to them for making that work - so hard in the current economy! But isn't it ironic how hard it is to see our babies grow up and get on with their adult lives?? Love your 'pizza tomatoes' idea. Thanks for all of the '411' on pressure canner maintenance! I'll have to re-watch this a couple years down the road when I own one, lol. it will be so nice to can chicken stock instead of taking up room in the freezer! Seeing you char all those veggies made my mouth water, yum!

      Oh girl, my guess is that a lot of the wonderful people doing this challenge feel the same way. I’m in the middle of trying to do three projects today and only have one of them done so far because my dryer just started making weird noises and so we had to stop and take it apart and now we’re getting a part to replace it and blah blah blah. I would just put the clothes on the line but it’s raining today of course. I also got a call from my cousin out of state that needed to talk as well as lots of text from a Daughter. You know, preserving is good, but life is better! You have a blessed day, friend! You got this! 🤗❤️

    I love the tomato pizza idea... (as with the kale ) oil/ dehydrating/ storing often do not work together well... How long do the slices last for... Have you had any problems of the oil making things rancid? Earlier? Wonderful ideas thank you

      I am so glad you liked them. Just wait until you taste them! 😁 Honestly, they don’t really stay around long enough for me to figure this out. I have had kale stored for about three months until I felt like it was a little too long. Although next time I’m going to cut down on the oil and see if that helps. I may only do 1 tablespoon of oil per recipe. I do like the crunchiness that it gives it though. I hope this was helpful and answered your question.     Has anyone waterglassed eggs that are unwashed but have been sitting out for awhile, like a month old? Still fine but I'd like to get them preserved. Do the HAVE TO BE glassed that same day you gather?

      I have been adding eggs to a jar a little a day for a week then added the lime water. I am working on a second jar. I don’t think I used same day when I glassed them last year either. However, I don’t know if a month old will work or not. I guess you could put just them in a jar and check them out in about three months and see how they are when broken open.     So interesting. I know that my hair grows faster when it's cut at certain moon phases and I know that if it gets cut too short or I don't like it - having it cut during that fast growing time will quickly cure the bad cut, too. I know sometimes my seeds sprout really fast during one moon phase and wait longer under another phase. If you follow the tides, the waters rise higher during one moon phases than another and fishermen and storms have favorite moon phases to do their tricks. We know so little and have forgotten so much in these "scientific" years that I love to learn from people like this man. Well, honestly I just love learning! Thanks for giving us this peek into a higher level of learning phases. LOL
