    Although I'm not a big fan of avocado or coconut, I would definitely try the popcorn and peanut butter cookies! The mention and information provided about choosing to not use white sugar when making sweet snacks was very insightful. This is the first time I've ever heard of sucanat, and the fact that it can be used as a replacement for white sugar and still somewhat provide a sweet taste is amazing, while also providing those minerals for us. We are similar in our need to have protein sprinkled in our sweet treats, because I'm always trying to find a way to sneak it in! A lot of the ingredients that we would normally use, can easily be substituted for healthier and sometimes cheaper choices. We should always be on the look out for nutritious ingredients when we're cooking, and to know that we have alternatives like sucanat and local honey is cool.

    While watching the "Sweet Snacks” video, I learned a lot about the nutrition of common snacks. As someone who is a baker, I am always trying out new recipes and I love to experiment with new ingredients in order to make desserts healthier. From this sustainability class I am currently taking, I learned that processed sugar is one of the leading causes of short term and long term health issues such as diabetes and memory problems. Libby using sucanat as a healthier alternative for white sugar is definitely something I want to implement. Furthermore, adding honey or maple syrup like the video mentioned are great sugar substitutes. I always try to replace dairy products in recipes for healthier choices such as greek yogurt and honey. By watching this video, I gained some great ideas on how to transform normal snacks to something more nutritious by adding protein and nutrients.

    Gisela Hernandez As a person who likes to indulge in sweet treats after a heavy meal, this video was very insightful on how to make sweet snacks, which are usually on the unhealthier side, better for my health and the environment. I wasn't aware of succanat sugar and now I'm wondering how it tastes so hopefully I can get my hands on some soon. I also never knew how bad white sugar is for me to the point where it can inhibit me from getting my nutrients so I will definitely consider switching sugars now. This video also surprised me because usually I'm not a fan of popcorn or avocados, but the snacks made in this video looked yummy. The popcorn didn't look super yellow like most do and the avocado had such a beautiful green color and smooth texture to it that it made me want to try it and especially with the coconut whipped cream because I love coconut. I also appreciated the fact that natural, organic and in season ingredients were used to make these sweet treats. I attend CSULB where we have a Grow Beach Garden, and we currently have strawberries which we donate to the CSULB Beach Pantry so that students can have access to organic strawberries that they can use for their own sweet creations!

    It was great knowing ways to keep your table fresh. I like how in the farmers market the food supply was grown naturally without the use of pesticides. I think more people should know about ways to have fresh food on their table that is organic for them to eat.

    I thought this episode was super useful and very informative. I read a blog post pertaining about sustainability, and i'm glad to see that you were using produce that was sustainably sourced and grown. I also appreciated how you used up as much of the produce as you could and that you saved the seeds from the produce to be able to farm vegetables in your garden for future food. I know food waste is a huge thing in our nation so it was really interesting to see that you only bought what you believed you were going to need instead of buying too much produce that could later lead to food waste. - Mariana Duran

    Kenneth Tran HM 370 I really appreciate how meticulous Libby is when it simply comes to something as arbitrary as food. Her prioritization of quality and how keen she is about the tiniest detail is great. From caring about the time frame it takes for your produce to come from farm to market to utilizing every part of a naturally produced vegetable, she know's how to make use of every single aspect of what vegetable is supposed to do. I was genuinely wowed when she was able to maximize the quality as well as expand the depth of something as simple as a tomato. She talked about factors such as shelf life, gmo enhancers, and cleanliness of produce, factors I really don't care about when it comes to my life. It was really insightful to learn form Libby as well as taking some advice to implement in the real world , the next time I shop for produce.

    Today Feb 25th, 2024 I just heard Prof Andrew Jenks on KCBS Radio summarize the situation. Very Good! He says it may already be too late to send more aid to Ukraine. He also says the Russian economy is thriving, they are exporting more oil now than before sanctions were imposed. he said sanctions do NOT work as ironically they make Russia more self-sufficient. He said something to the effect that Ukraine may now need to give up some land to bide time and wait for Putin to die. Russia is stronger now. It's weak point was when the head of the Wagner Group turned on Putin, but Russia has gained military strength since then and Putin's popularity at home is risen. He also provided some comments on European allies, Germany specifically.

    This is all incredible! A month ago I read about Ingo Swamp and just now reading "Mind Trek" from Joseph McMonEagle. All about Remote viewing. Finally in the book just finished, Dr. Utts is on page 225 and 225 on the NCR report. Finally, in the interned all I have now it is all about Remote Viewing. First time in my life I see all of these things together. Talk about "Premonitions"????

    Beginning with everything about the # & now the part about the stairwell & the useless railing reminds me of Wilde’s preface to The Picture of Dorian Gray “All art is at once surface and symbol…We can forgive a man for making a useful thing as long as he does not admire it. The only excuse for making a useless thing is that one admires it intensely. All art is quite useless.” It’s interesting to listen to this after many listens of the two seasons of Nice Try! & Articles of Interest which just wrapped its 4th evergreen season #ToManyMore & to have it confirmed that yes like any recording there’s a bit of refinement through editing + years more of public speaking, but really it’s just 99% Avery Trufelman’s mellifluously nerdy wit!     Snacks are my everyday must-haves, but the ones I choose might not always be the most nutritions. The snacks I typically intake are high in sugar, corn syrup, artificial flavors, and preservedes. With the use of this video it demonstrated alternatives that can help with nutrients and sustainability. A key thing I enjoyed about the videos is that as the recipes where instructed Ms. Libby was great at demonstrating interesting facts about the ingredients that were needed for the receipt and showed a way to cut a certain ingredient to get the best flavor and the best results. For example, she illustrated that walnuts contain high omega 3 and that the nutrients from an avocado comes from the side of the skin. Along with the way that Ms. Libby grated the onion because she wanted to get all the juices to get a greater flavor for the dip. I really appreciated the tips and tricks along with the interesting facts.

    Hi everyone! My name is Cindy Nguyen and I’m currently taking a class on exploring sustainable food systems in CSULB. As someone who has a very strong sweet tooth, I have learned from my nutrient class years ago that white sugar is very processed and isn’t good for my health. However, I hadn’t found a substitute for that until I watched this video and learned about succanat, which is just a straight dehydrated cane juice that still has minerals in it. It can be used just like sugar to make all my favorite sweet snacks, like popcorn. It is also fun to learn about how ghee, coconut oil, or avocado oil can withstand high heat. I have always thought that using any kind of oil to make popcorn would work the same. It’s mind-blowing to know that most of our corn is genetically modified. I actually felt a sense of relief when I heard that a different kind of corn was used to make popcorn. Although popcorn was my all-time favorite snack, I would feel scared to consume it a lot if the corn was genetically modified. Furthermore, I would definitely take note of the last tip Professor Libby gave on how you should let the popcorn cool down a little longer after it is done so that it gets crispy. After watching this video, I feel like making some yummy and healthy popcorn using the new sugar substitute that I’ve just learned- succanat. I will also make sure to try the Avocado Lime Mousse and Peanut Butter Cookies without using white sugar.

    At the beginning of the video, I was a little surprised that she did not wash the chicken in a salt water and lemon solution. I always wash my chicken no matter what. I think it's great to see that we are still able to buy chicken and poultry that is completely organic and truly farm to table. Most chickens that we buy in the grocery store may have the label that says the chicken is organic and air chilled but it hard to be sure. The fact that we have grocery stores that are truly selling all organic products is wonderful.

    I had the biggest sweet tooth in the family and would always eat as many sweet snacks that I had access to. Now, however, I have been restraining myself as I realized just how unhealthy and how much it was impacting my body. It's great to know that their are healthy alternatives to sweets, that way I don't have to completely give up on eating anything sweet. I find it fascinating that popcorn is a different kind of corn and how great it looks. All the different recipes look delicious despite not using the easy jarred products such as the peanut butter to avoid any extra sugar or fats. I can't wait to try these recipes myself and find more alternatives for making sweets.

    Libby this was a great episode. As a student who volunteered at our campus garden, your teaching of saving seeds for replanting later, and using compost from the veggie waste is very resourceful! The farmers market suggestion for getting all your food from is something I agree with. Freshness comes from farms, and the difference could be up to 5 days of freshness if purchased at the store. Knowing where our foods are sourced from is important because you want to know what foods your consuming and if they're safe and not filled with pesticides. Glad she brought up proper washing of the hands earlier in the video. I am an advocate on sanitary food prep!

    I could understand that even the same ingredients and same foods can have vastly different effects on our health depending on how they are grown and how they are made. I had heard that most of corn is genetically modified and is not good for our health, but I didn't know that the corn used in popcorn is a different kind. Also, the husk of corn has the role of protecting it from pesticides, so it makes sense that it is safe to eat. I realized how healthy it is to make my own food, as I'm unsure of what fats and sugars are in already made and sold products like popcorn and peanut butter. Off-the-shelf products are certainly easier, but I feel like they are costly considering the various risks involved. - Asaka Tanitsu ​詳細を見る
