Honestly I think they all forget that Frisk is a kid. What would a normal kid do the first time when faced with literal monsters (some of which can actually come from nightmares such as the Skelebros)? They'd lash out trying to protect themselves, not knowing some of the monsters won't actually kill them. So of course there's going to be a first time geno run, mabye even a few just in an attempt to keep safe. And then when Frisk resets and thinks "hey mabye I should listen this time since nothing changes if I dont" then there's a nutreal/true pacifist run Sans needs a child psychology lesson
