I have done this on many a neckline, but I finish it off by flattening the inside pleat into equal parts that fit on either side of the pleat line on the outside, then I add an embellishment if liked, like a button or a tiny flower, etc. It finishes it off a little neater.

Your jacket is beautiful and I’m sure you’ll get many years of wear out of it. The pattern does seem very expensive too, when you have to buy the lining add-on separately. Has anyone made the Itch to Stitch Winterthur jacket yet? It looks very similar and is currently on sale for $12 with a lining included.
