I'm the type of person who just wants to try a bite of everything on the menu rather than a big dinner plate. Such quirky traits of mine, combined with an ever-growing passion for cooking/baking and a love for wine, led me to create Sip & App as a place to share my favorite recipes in small bites or appetizer sizes. I hope you'll try making some of my recipes and start entertaining at home, where you actually can enjoy a bite of everything.
Peach Gazpacho with Crispy Coconut Shrimp | Best Summer Appetizers #appetizer
Peach season is here and will be gone before you know it! So grab them before they disappear and savor the summer flavors. The gazpacho itself is completely vegan, so everyone can enjoy this dish together.
Depending on the size of each serving, this recipe makes 10-12 servings in small shooters (as presented in this video), or 2-3 soup-size servings. In total, it makes about 2 Cups of Gazpacho
Ingredients:
**For Gazpacho**
260g Peaches (about 2 Large or 3 Small ones)
½ Cup Fresh Orange Juice (from about 2 large Oranges)
2 TBSP Fresh Lime Juice
30g Red Onions
15g Jalapeno Peppers (seeds removed)
50g Cucumbers
50g Red Bell Peppers (seeds removed)
1 Clove Garlic (about 5g)
1 TBSP Extra Virgin Olive Oil
5g Cilantro
½ tsp Salt
(Completely Optional) 1.5 OZ Tequila or Vodka
**For Coconut Shrimp**
12 Large Shrimp
¼ Cup All Purpose Flour
1 tsp Garlic Powder
1 tsp Onion Powder
½ tsp Salt
½ tsp Black Pepper
1 Egg
½ Cup Unsweetened Shredded Coconut Flakes
¼ Cup Panko Bread Crumbs
Oil for Shallow Frying (I use avocado oil)
- Peaches can be swapped with Mangos or Pineapples, if not in season.
- Jalapeno Peppers can be omitted if you don’t like heat, or you can add more if you prefer more spicy.
- Cilantro can be swapped with other herbs such as mint or parsley
- Will keep 3-4 days in the fridge

@@SipandApp i m sorry i say so because i just dicovered Aquafaba and it is amazing , like in a chocolate mousse , just with a little chocolate , it tadtes like eating the essence of chocolate , incredible ...i guess with Macha it would suit very well the purpose too
Absolutely! In fact, I was plant-based for a period of time, and I experimented a lot with Aquafaba - great stuff!! Maybe I should revisit those recipes sometime.

I have made these with ground chicken instead of pork. Although they will be less juicy, they will still be delicious and way better than any store-bought ones. Happy cooking!😃

My oven is rubbish - can I cook them in an air fryer and if so, what time/temp should I use?
I'm sorry to hear about your oven! I wish I knew the answer, as I don't (yet) own an air fryer. I have heard that it's like a mini convection oven, so if you are up for an experiment, I would maybe lower the temp and time a little and see. Say 375F and start checking around 12 minutes? Let me know if you ever try it!
