Lechon Kawali: A popular delicacy in the Philippines, lechon kawali is made of crispy deep-fried pig belly. Usually, the pig belly is prepared by boiling it until it becomes tender, and then removing any excess moisture by either air drying or chilling it. After drying, the pig belly is deep-fried until the skin turns golden brown and crispy, creating a mouthwatering texture contrast between the soft meat and the crunchy exterior.
