You may be right. I don’t think it is very good what I do. But I don’t have another smaller scale right now so this is what I do.
So as you are frothing the milk, you are slowly moving the jug downwards to keep just the top in the milk? Oppose to letting the milk aerate and grow in volume above the tip? Hope that makes sense.
Yess, and I try to do it slowly and not incorporate too much air because your milk will become too stiff.

If you stop the shot mid way and restart (it looks like you are trying to preinfuse), the back pressure unseats the puck and will cause uneven extraction. Maybe use a E61 flow control kit for proper pre infusion.
