    Your blade rollers aren't aligned properly. Can you not hear the skipping your machine might also need to be slightly repaired. So much for all those years of experience.

    Let me preface this by saying that I am not a steak guy nor will I ever be. I grew up on boot leather cuts that were basically not the greatest. I respect the fact that many ppl are steak eaters and I love those ppl like kin but I will never be known for being a steak lover. This cut of meat is SO TENDER! I have never heard of this cut up until this past weekend when my family was cooking. SO tender! Hardly a need for sauce or seasoning but even how my sis is learning how to use the grill, she did very well on this cut bc I ate EVERY. DAMN. PIECE of it. Best wishes!

    First thing I was taught at the meat market 20 years ago was to lift the guard up and put a magnet on the sensor. Way faster. Saw a few fingers pop off on the saw but never have I seen someone cube em.

    Back when i was a meat cutter i ran the cube steak machine every other day for.8 years with no guard and never even came close lol. You'd have to be braindead and high to get your fingers stuck in there. Now ,the band saw is a different story lol. I remember when i was 17 watching my meat manager cut his.pinky off in the bandsaw and told me to open up the saw and find it lol. I dug through a daysbworth of bone dust and meat mush looking for a fi ger that vaporized as soon asthe blade touched it 😂
