Why isn't "flower" given an overloaded adj. definition in the dictionary if so? Is it because potentially almost any noun can be used in this attributive/adjunct form? If so, then why is there an overloaded adj. definition of "cold" given that the adjective definition is virtually identical to the noun form?

I came here because most people like calling it a "Canada goose," but I don´t think country names can just be made into attributive nouns without converting them into their adjective form. Therefore, as I understand it, it should be called "Canadian goose." After all, I am not a "Canada citizen." I´m a "Canadian citizen."
