Finding Joy in Simple Living - Grocery Haul and From Scratch Cooking
This week we I will be showing you the everyday beauty that surrounds our life on our homestead. We will be making 2 different types of farmhouse cheeses, I will be showing you a small grocery haul, we will be using up some rhubarb to make muffins and I will be cooking a pasta soup that utilizes the cheeses I made.
Soaked Muffin Recipe + ( add rhubarb and cinnamon for this flavour profile)

Quick Mozzarella
1 gallon of milk
1 1/2 teaspoons of citric acid
1/4 teaspoon of rennet
Bring the milk for 55F, add the citric acid mix in 1/4 cup of water. Stir it in and continue warming the milk to around 88F. Add the rennet in a 1/4 cup of water. Stir gently, turn off the heat and wait 10 minutes. After 10 minutes, break up the curds and turn the heat back up. Stir occasionally until mozzarella can be pulled. Stretch it on the back of the spoon or with your hands until the mozzarella no longer breaks when stretched and looks shiny and smooth.
Cottage Cheese
Place1 gallon of whole milk into the instant pot or on the stove and warm to 180F. If using the instant pot, hit the yogurt function until it reads boil. Once the milk is at temperature, stir in 1/2 cup of vinegar. Let it sit for 30 minutes. Strain out the whey and let the curds drain in cheese cloth for an hour or two. Add 1 teaspoon of salt to the curds, mix together and store in a container. To make it a creamy consistency like store-bought cottage cheese, add cream or milk to the curds before serving.
Pasta Soup
1 diced onion
4 cloves of garlic crushed
1 jar of tomato sauce
2 tbsp of tomato sauce
1 tablespoon of dried basil
2 tablespoons of sugar, maple syrup or honey
Pasta noodles of your choice
8 cups of bone broth
3 cups of chopped spinach
2 lbs of ground beef
In a large pot, sauté diced onion and garlic in oil. Add the ground beef and cook until no longer pink. Add the tomato sauce, the basil, the tomato paste, the sugar, the bone broth and salt to taste. Once it comes to a boil add your pasta and simmer until the pasta is cooked, remembering to stir so the pasta does not stick. Add spinach and cook until wilted. Serve pasta with ricotta ( or cottage cheese) and mozzarella.

    Absolutely love your channel! Your farm name caught my eye as I Love the Most Sacred Heart of Jesus and our farm is Fiat Farm! Traditional Catholic mom of 8 in MI trying my best to homestead and homeschool my children and get them to Heaven! Our families are so similar, I even have the same baby carrier and dog.     Hello justine. I have been following you few months now. I am also a christian. I was wondering where in ontario did you & your hubby purchase your homestead? We are currently in georgetown, ontario. But we won't mind to buy a small farm with a farm house a little further away from here. We are looking something in ontario also, but not a huge section. Maybe around 5 to 10 acres the most. Because we have plans on getting a daĂŹry cow, chickens for eggs and some for meat, goat, lamb and pigs. With the intention of selling the extra piglets once they are of age, same goes for the kids and lambs too, have another source of income. Plus the money would buy them hay and feed for the winter when we can"t put them out on the pasture. Plus we will be growing our own food to carry us out over winter until the next year harvest. Such as potatoes, sweet potatoes, carrots, beets, peanuts, some white wheats, and fruit trees and berries, onions, garlic and all the herbs etc. Plus i want a greenhouse and a small high tunnel to grow fall & winter crops. How much is farms where or close to your area? And again where in ontario are you guys? Thanks in advance. Sabrina

      We are in eastern Ontario and property here is pretty expensive at the moment although I’ve read that prices will go down a bit in the future. What helped us be able to purchase our 16 acres was purchasing a home that needed a lot of work. This house had no kitchen, no laundry room and no floors, for that reason it was not selling. We offered what we thought was a fair offer (100k under asking) and they took the offer. We have then been able to cash flow a lot of the renovations while still growing our homestead. It’s not for everyone as we’ve basically been living in a renovation for 3 years but we were able to purchase a property we could not have afforded if the home was in good condition.

      Oh ok thank you for all that information. You did what you could afford and I would do the same too if I am even so lucky to find such a place. Maybe I might go the yurt way and rent a piece of farm land to put our yurt on, and eventually ask the farm owner to sell me the piece of land my yurt is on. For sure I would make sure to have enough land to have our own chicken coop, and a space for a barn for a cow and a pig and a goat and land for them to eat fresh grass every year. And the rest of the land would be a portion for our gardens & green house and few fruit trees. With that i would settle with it because the other ways are too expensive for my budget as a single mom of 2 girls. Thanks Sabrina

      I’ve always just prioritized school and all the other things come second. So I might not get the house cleaned one day, but at least I know school got done. I then use the time left after school (if there is any) to do all the other things. Hope that helps!

    Rhubarb leaves make an excellent insecticide for the garden. Make a tea with them in a large pail and let set for a few days then use it to spray on the garden to kill off unwanted insects.
