Caro-Kann defense is a very popular blacks opening against the E5 pawn... But yes, more often than not, most players would just move pawns to the center and go for a traditional game. Lower elos don't really study common/popular openings and the Caro-kann defense only really works if the white plays Pe5 so i don't exactly blame you for not knowing this.
