Easy PUMPKIN soup recipe with vegetable stock | UK RECIPE | VEGETARIAN
This is an easy recipe for pumpkin soup made with vegetable stock. It's a vegetarian recipe and has added sweetcorn (which you can leave out)

INGREDIENTS FOR PUMPKIN SOUP WITH TOASTED SWEETCORN
Serves 6
700g Pumpkin peeled, deseeded and chopped
570g sweetcorn (tinned)
25g butter x2
1 onion, diced
725ml vegetable stock
275ml milk
Salt & Pepper
Method
1. Start by melting the 1 x 25 grams butter in a pan, then add the onions, and cook for 8 minutes on a low heat until softened.
2. Add the pumpkin and half the sweetcorn, salt and pepper and stir. Leave to cook on a low heat for about 10 minutes for the vegetables to soften.
3. Next pour in the stock and milk and the lid (leaving a small gap) and simmer for 20 minutes.
4. While that is cooking preheat the grill. Then melt the remaining butter and mix together with the remaining sweetcorn and spread it out on a baking tray and put it under the grill (about 8 cm from the heat) and toast for approx. 8 minutes. Move the sweetcorn around half way through.
5. When the soup is ready add it to a food processor or blender (or hand blender like I am) and blend it to a puree. Now serve into bowls and add the toasted sweetcorn on top.

How to make CREAMY SWEDE SOUP recipe | Vegetarian cooking. 25.1.24. Quality of water is the only issue I have with making my soups. Horrendous quality of water in line with old EU dictates? . The swede soup I made wasn't too bad. I did find doing likewise with taters (as well as roasting swede) makes a sweeter soup. I used parsley instead of thyme. and carrots are somewhat bemusing... I'm not a fan. Celery? The Olds swear by it. It leaves gaps within a soup's flavour. I threw sweet chilli into my soup. You'd probably use celery to dull that. Milk as opposed to cream as I ain't a manual labourer, no more....i'm gonna progress with chili soups...this is cool, though, as I can elaborate on a theme...Aldi 46p a swede. Is that good?

I had no lemon or honey so used pineapple juice and golden syrup instead. All I can say is wowzers I’ll never buy shop bought dressing ever again

I just made this and because I’m lactose intolerant and didn’t have any dairy free cream I added vegan mayonnaise it tasted AMAZING!! ☺️☺️☺️

You don't need to pre-cook the apple. They cook when they go in the oven

can i use granulated sugar instead of golden caster sugar
caster sugar is just powdered sugar, or icing sugar, or confectioner's sugar, and I'm pretty sure you can just blend normal sugar *really* well to get powdered sugar, Here's a video on how: czcams.com/video/yABSngvepBY/video.html

I came across your recipe after I went apple picking yesterday with my little one. I was so disappointed that every recipe I seemed to come across called for cinnamon. I never baked with apples before so I didn't know if taking cinnamon out entirely would change the outcome. Then I found your video and I'm SO HAPPY I did!! It came out so great!
