    French Onion soup is my go-to comfort cook so I’ve caramelized so many goddamn onions. Only thing I would say is don’t add sugar, that’s cheating! Just kidding, but really you don’t need the sugar at all, especially since you actually caramelized them

    I love how once in a while there's a low count video recommendation like this that hits the mark so succinctly and deserves millions of views. It's perfectly to the point and covers something I've never understood. I'm one of those "throw it in a pot and stir it around for a few minutes" types and now I know better.

    You're supposed to recalibrate it with cold water. Take it from the heat and dip it in cold water afterward, then let it return to room temperature and use it as intended perfectly accurate.

    You can do the same exact thing with a glass of ice water not only is it safer but the freezing temperature of water does not change at altitude it will always read 32°F/0°C (source: am professional cook)

      Oh, I have since replaced them. Truth is, many of my friends run their Eggs with no gasket at all. As long as the dome alignment is correct, it’ll work just fine.
