This has similarities to the Scottish dish Rumbletutum. You fry a yellow onion and cabbage together with butter. You add bitter to heated milk , put the green onions in it, and let it stand for a few minutes to infuse the green onions and then add to the mash potato. You put a layer of the fried cabbabe, the potatoes, then cheese on top, add the other layer of cabbage, top with potatoes, and add cheese on top. You put it in the oven, then until the cheese is bubbly and melted. I'll try this though

I have been making Chicken Florentine soup for many years (but its fun to check out how others do it). This version is very close to my own. But I have never made a cornstarch slurry for cream based soups. Rather make a roux, by adding flour to your sauteéd veggies (be sure you have enough butter), stirring constantly until the flour cooks just a bit. Then add broth for cooking the meat (tho canned chicken or roasted whole chicken both work great). Finally I add the cream, because you don't want to boil beyond this point. Also, try chopping the spinach a bit or its rather big on the spoon. I always add cheese too - doesn't matter how much or what kind so long as it melts smoothly. In fact this, like many soups, doesn't have to be limited by amounts. Use what you have. If you think it needs more veggies, add them. More cream? Or maybe milk? Add that. Its entirely up to you as the cook. You can hardly go wrong. I also like to add a bit of thyme or other aromatic herbs - not too much tho. You can't go wrong. Honestly, a bit of bacon too is just decadent.
