I think the straks have to be thicker
From Koji Alchemy, the steaks do need to be thick if you intend to cut off the pellicle. But from conversations I've had, the pellicle is safe to eat according to a USDA inspector. With Koji Dry Aging, there is very minimal spoilage that happens within 48 hours. I have found that eating it produces a nice funk. Giving enough time to produce a sear (I take it out of the oven at 100 degrees and sear until 135) during a reverse sear ensures many microorganisms that are on the surface will be "sanitized". I really recommend this method. Produces excellent flavor.

I liked it. These are the petite steaks. You can get them for $60. I got them as part of a box of 3. It's very fatty, so it makes sense to cut it thin if you can. The next A5 video will be of a larger Rib Eye.

I just purchased the TK-01, did you get it figured out, any tips to a new owner?
I find the most common issue I've had since owning this machine that causes this is a faulty connection with the tube to the milk carafe. If you're using the milk carafe, I recommend putting it in the fridge when not in use. This alters the metal by reducing resistance and allows entry of the tube end to be inserted into the connector more securely. These are the best tips I could come up with.
