Cooking for 1-2: pork belly bowls
Pork Belly Bowls for 1-2 people
Ingredients:
3/4 lb. pork belly (buy the pre-cut and not the whole one)
Hoisin sauce (Chinese bbq sauce found on the international aisle)
2 broccoli crowns
1 tbsp butter
1 tbsp olive oil
1 cup rice, rinsed
2 cups water
Directions:
1. Place pork belly into a baking dish.
2. Preheat oven to 350°
3. Squeeze hoisin onto side one of the pork belly strips. Using a brush to spread it.
4. Flip pork belly and do the same to this side.
5. Cover with foil and cook in oven for 30 minutes.
6. Get your rice cooking. Bring 1 cup rice and 2 cups water to a boil. Once it's boiling cover with a lid, turn temp down to low/medium heat and set a timer for 20 minutes. Do not touch it!
7. After 20 minutes remove rice from burner and set aside. Do not take off the lid yet!
8. After 30 minutes remove pork belly from oven. Remove foil and pour out any fat carefully.
9. Spread more hoisin on each side and return to oven for an additional 20-30 minutes, uncovered.
10. Cut broccoli from stems, drizzle with olive oil, salt, pepper and a little garlic powder. Toss ground to coat and place in a microwave safe dish. Add a small amount of water to dish. Microwave for 5 minutes.
11. Remove broccoli from microwave and toss in 1 tbsp. butter. Return to microwave and cook for an additional 1-2 minutes. Set aside.
12. Remove pork belly from oven and slice into bite sized pieces. I only ate one strip and will save the other for another meal.
13. Take the lid off the rice and fluff it.
14. Add rice to bowl.
15. Spoon broccoli into bowl.
16. Place pork belly on top of rice and drizzle with a little more hoisin.
17. Garnish with green onions.
