菜乾豬骨粥Dried Vegetable Pork Bone Porridge
今天和大家煮一個清熱降火又很好味的豬骨粥Today I’m going to cook a delicious pork bone porridge that clears away heat and reduces internal heat
材料有菜乾 兩扎, 紅蘿蔔一個,軟骨 一塊, 薑, 花生大半碗, 白米一杯半The ingredients include two sticks of dried vegetables, one carrot, one piece of soft bone, ginger, half a bowl of peanuts, and one and a half cups of white rice
買回來的軟骨,先用豆粉水浸泡一下, 然後清洗乾淨, 抹乾水Soak the purchased soft bone in soy flour water first, then clean it and wipe it dry
在軟骨的兩面, 放少許鹽,大概醃一小時Put a little salt on both sides of the soft bone and marinate for about an hour
在醃軟骨的時候, 我們可以清洗菜乾When marinating soft bone, we can wash the dried vegetables
先用豆粉水把菜乾浸泡一下, 把菜葉打開清洗First soak the dried vegetables in soy flour water, then open the vegetable leaves and wash them
菜乾裏面的沙, 就會被去掉, 然後沖水幾次The sand inside the dried vegetables will be removed and then rinsed several times
最後把菜乾表面的水榨乾Finally, squeeze out the water on the surface of the dried vegetables
菜乾的頭部分很硬, 很難煮到軟熟, 所以把菜乾頭切掉The top part of the dried vegetables is very hard and difficult to cook until soft, so cut off the top part of the dried vegetables
然後把菜葉切成細粒Then cut the vegetable leaves into fine pieces
煮完之後的菜乾粒就會很柔軟,很容易吃After cooking, the dried vegetables will be very soft and easy to eat
紅蘿蔔去皮,然後切成細片Peel the carrots and cut into thin slices
豬骨醃了一小時之後, 用清水沖洗, 然後切成 一塊塊After marinating the soft bone for an hour, rinse them with water and cut them into pieces
我用軟骨取代豬骨, 因為豬骨有很多骨的碎片I used soft bone instead of pork bones because pork bones have a lot of bone fragments
用軟骨比較適合老人及小孩食用Soft bone is more suitable for the elderly and children to eat
白米方面,首先用清水沖洗For white rice, rinse it with water first
然後用少許鹽和油醃白米Then marinate the white rice with a little salt and oil
把豬軟骨放入室溫水,然後煮至沸騰Add soft bone to room temperature water and bring to boil
豬骨的污漬和血水就會被去除Soft bone stains and blood will be removed
然後用清水沖洗Then rinse with water
開始煮粥Start cooking porridge
我們用半煲的水We use half pot water
放入豬軟骨, 放入薑, 紅蘿蔔, 花生 (已經清洗乾淨和浸水), 菜乾Add pork soft bone, ginger, carrots, peanuts (already washed and soaked in water), and dried vegetables
把蓋蓋上, 先用大火把粥煮至沸騰, 再用細火煮一小時Cover the lid, cook the porridge over high heat until it boils, then cook over low heat for one hour
然後放入已經預先醃好的米Then add the marinated rice
攪勻之後, 用細火煮一小時After stirring well, cook over low heat for one hour
煮的時候,你可以放一支湯匙在煲蓋下面When cooking, you can put a spoon under the lid of the pot
這樣, 煮的時候, 粥就不會溢出In this way, the porridge will not overflow when cooking
一小時之後, 如果你看見菜乾和花生都已經軟熟, 表示粥已經煮好After an hour, if you see that the dried vegetables and peanuts are soft and cooked, it means the porridge is ready
試味, 你覺得味道合適就可以Taste it, see if the taste is right to you
如果你覺得味道不夠,你可以加少許鹽提升味道If you think the flavor is not enough, you can add a little salt to enhance the taste
