I don't mess with rolling out the dough and cutting little rectangles. I dropped them by the teaspoon into the broth. They fluff up wonderfully.

I just throw some flour in a bowl, some baking powder based on how much flour, salt, oil.. again a good guess and then water and stir until it's mixed and the right consistency. Too thin, add flour. Too thick, add water. And then drop in boiling broth. They're done when they ride the rapids and the flour is cooked. I probably stay right at 222 pounds eating a lot of dumplings and chicken. It's the cake and bread that accounts for the other dozen or so pounds.
I was taught dumplings are biscuits in the chicken. Pastry was rolled out like you did. So we called it chicken and pastry. My Grandmother put dumplings in mustard greens. She made dumplings out of corn meal for mustard green.
It's not quite the same as biscuits this way, but I have seen it done as a chicken pot pie that way. There's no wrong way if your family likes it :)
FYI, my grandmother let her dough sit covered for about 20 minutes before shaping. She said it allowed the flour to soak up the liquid allowing it to be more even. She also always cut her onion in half when making the chicken. Otherwise your recipe is almost the same.
You can definitely do both of those things and get a similar result. That's the beauty of home cooking isn't it? I've found several recipes of my great grandmother's that must have been passed around a lot in her community, because they show up here and there around where I live 100 miles away.

What's the lemons do? Seems it'd make it sour.
Acidity is key to bringing out flavor like salt is. Lemon is used on seafood often, which is normally a big part of a low country boil. I only had shrimp, but crab would have been a nice addition.
