You had the expansion pack and u didnt use it

add efficiency and a heat shield since its going to mats.

add some more efficiency and aerodynamics. this helps the rocket go further. also make simpler rockets. Simpler rockets help you go further

add aerodynamics such as the side cone, move the engines a bit down to stop heating if it turns and I recommend adding side seperators on the boosters which is optional also if you add docking ports please use rcs to help in docking/transfer. Also adding a 2nd stage would be good Incase you need to rendezvous with another spacecraft or go to another celestial body/re entry. You can add a capsule after you add the second stage but if you do that add parachutes, a stage seperators, and a heat shield

Yeah. I think your rocket won’t have enough Delta V with that many hawk engines. Also, you do know that SFS has aerodynamics physics?

Engines need to be aligned to avoid burning the fuel tanks. Add cones on the side boosters to make the rocket abit faster. Instead of probe use capsule. Docking port on top and clip parachutes on side. Add an heat shield an separator. After that. ( Optional ) Add fairing on the capsule to add up to aerodynamics
