Interview with Boram Um - 2023 World Barista Champion
Last Month, we had the pleasure of interviewing the 2023 World Barista Champion, Boram Um from Brazil. Go watch his WBC routine after this interview. If you’ve ever seen a more relaxed and professional workflow, let us know.
We get across a lot of subjects with the competitions. One great question touches upon the 'To Gesha or not to Gesha' dilemma he faced as a Brazilian barista whose family own a coffee farm.
We get Boram’s take on some of the differences he sees between the Brazilian and Australian cafe culture; we talk AutoCombs and Robots; and much more besides...

Whose design was forgotten until the painstaking work of Australian author and espresso ...

Surfactants in milk are what allows a barista to produce a long lasting and glossy foam that is ideal for pouring latte art. A surfactant is a compound that lowers the surface tension between two substances. Thank you so much for the great knowledge
No need to place a little amount of glue on the foil to keep it firm?
We have a few questions.... 1) We got one auto comb that doesn't spin well. We got one that does. Do we need a repair kit? Or are all the parts we need in the box? 2) We ordered an Autocomb for one of our new shops that has a LM KB90... The Autocomb doesn't fit on that portafilter.... Thoughts? PS... We are LOVING this device in two of our cafes! Can't wait to figure out a fix for the KB90! Hope to hear back soon! J
Who honestly buys into this bullshit being spewed?
As a laser engineer, used to do some serious alignment on precision gear, I'm not a huge fan of this kind of grinders because of the alignment.
One of my small screws was with a little defect so I can’t remove it. The last one. Very unfortunate for me. This autoComb is eluding me
rubber protection from pliers (which is in the box with the device), fits perfectly on the torque shaft, for greater grip. try it
Replacement parts works great. Thanks for the great service.
I received it promptly and installed it quickly. I am now feeling extremely pleased.
☕
We really love this tool! We can't wait to use it the way y'all intended, but even with how it operates today it does an amazing job of keeping our shots pulling very, very consistently. You all are setting a high standard for customer service.
Looking forward to receiving it. Loving it other than what these 2 fixes will fix.
AutoCom is always the best. I'm using it so well. Thank you
Love the team’s work. Really looking forward to getting those parts delivered👏
Interesting tool. It seems like it's set up for right-handed baristas. Can it be converted for lefties also?
It's 100% ambidextrous. The portafilter thumb knob ends up over the middle of the handle for both lefties and righties :)
@@barista_hustle Thanks for your reply. Now wouldn't a lefty have to pull with the thumb, instead of pushing the knob?
@@minimax262 yes but it's not that different. What power users have found is that they use the hand holding the autocomb to do all of the downwards and twisting movements, then just use the thumb to gently hold in place. ie the thumb never moves side to side. (Does that make sense?)
@@barista_hustle I think I follow. However, I still believe that it would feel more natural to hold the knob in place by pushing it sideways as shown here 0:39, rather than pushing it down. Now that’s all me speculating. I hope to get a chance to try it out for myself at some point in time. It’s definitely a very interesting device.
Problem I find with these combers that sit on the basket is when you remove them the fluffed grinds usually overflow the basket and it’s messy to get them tamped. You can even clearly see this in the video here.
Use the wavy smoothing tool before the tamp.
The clean part is so satisfying. ❤❤❤
I think It actually should be 500 particle and 250micron radius, becouse when sifting particles 250-500 microns there where also particles with 500microns diameter, and it was fully extracted. Am I thinking corectly?
Thank you. I would love a 51.6mm version for my La Pavoni.😅. Please make one for us!
Things are starting to get complicated.
Thoughts @baristahustle1486 as to potential for stationary placement?
Seems like overkill but it also works really well.
Legend! Thank you for this
Does this work with a naked portafilter (i.e., no spouts)? It's not clear that you can place the autocomb + (naked) portafiler on the counter? You'd have to hold it aloft? I do not have effective use of one arm, so...
Yeah this is definitely intended as a two handed process. If using one handed, a spouted portafilter is necessary.
Great tutorial guys, super detailed (as usual!)✨

I can’t see a market for this product
Meanwhile I think every specialty cafe should have and be using one
Well in places where speed and consistency are needed this is a no brainer. From a business standpoint makes your product consitent and fast without sacrificing quality. But for home i agree the market would be smaller.
@@m.andre824 Haha no way cafes will use this bulky shit. These WDT tools are mainly for domestic uses. I have never seen specialty cafes doing wdt or using any other distribution tools due to high volumes. It takes way too much time and you can't spend time like that on a single order. Every extra minutes matter in the cafe especially during the rush. That's why fewer and fewer specialty cafes now even offer pour-overs on their menu. Even then, I would not use this even for home set up as it looks super ugly, way bulky and needs too much hassle. I would rather use regular WDT, Moonraker or other cheaper 3d printed ones.
I was all excited after watching this, so I went to make a pourover, i made it one click finer and decided to use about 30g less water. it tasted like burnt rubber and pennies, what the hell happened?
Wtf is that useless crap
Does it work with 49mm baskets?
Yes, you’re able to adjust the diameter of this tool from 48 mm to 58.5 mm.
No unfortunately this is 58mm only!
@@barista_hustle o thank you for the correction. Lever machine get no fun tools. Haha
@@deathkid411If you have access to a 3d printer you can check out the umikot on printables. It's also 58mm only but I'm currently working out the last few problems with the 49mm version for my pre mil Pavoni.
Looks really cool would love to try.
This honestly just looks very bad.
Hi! I’ve been wondering in the table of the numbers that indicate the depth of water into the grounds, how did you actually get those numbers? Still a bit confused about how you got the number “100 microns”.. thanks!
He assumes that 200micron particle can be extracted fully, so water is able to penetrate radius of this particle. I think It actually should be 500 particle and 250micron radius, becouse when sifting particles 250-500 microns there where also particles with 500microns diameter, and it was fully extracted.
Has anyone heard of an estimated shipping date?
54mm available?
great design, robust and fast. If you incorporated spirographic movement like the moonraker, this would be perfect cafe tool given it's speed and durability.
Many 3D printed tools also had that before webers version even existed. Their needle placement seems like it was intelligently design though
this looks much more realistic to implement into a cafe setting compared to the weber thing.
Is the center of rotation at the center of the portafilter? Or is it offset? Is it a circular or ovalized path?
From all the footage it looks like this product only works on double spouted PFs that sit on the counter because of the long legs that wrap around the PF. This wouldn’t really work on a naked/bottomless PF because you would have to sit that in a PF holder/stand and the legs on the Autocomb would be obstructed. Can you confirm this?
I think it will works on a naked PF.
@@HuibNederhofthere was another youtube video of a south korean doing a review. it works with a naked PF but you have to hold the PF in the air. if you sit it on the counter the legs of the autocomb are longer than the naked PF. kind of ruins the workflow for anyone using a naked PF with a tamping station/stand because the legs of the autocomb will surely bump into that too. not sure how i feel about doing wdt while holding the PF in the air. i can see why this is meant for cafe environment where they typically use double spout PF.
It looks so cool, but what if we set this gadget as stationary and just put the portafilter from the bottom of it(like auto tamper) and another hand just spins it so it would be faster. Decrease the time to pick it up and take it away.
Agreed. Thoughts @baristahustle1486
200usd? tehehehehe no thanks
wow 200 for that yeah no thanks and it looks like a plastic for that waste of money
What's the difference with the Duomo?
Version for 53/54 mm baskets in the plans?
Looks like a very cool, fast efficient and adaptable design! I like it. Does the pattern of spinning needles cover the whole coffee bed?
Thanks! Yeah they all sit at different radii
@@barista_hustle Website says it currently does NOT fit the Weber Unifilter, but you're working on it for v2, If I pre-ordered which version will be shipped, v2 or v1?
Neat 👌🏽
