Moonrise
MOONRISE is the first of a bunch ambient music compositions I am planning to produce over the coming 12 months. Future compositions will include affirmations that will engage listeners with a safe and subliminal mix of positive and life-affirming affirmations wrapped in an atmosphere of gentle, ambient melodies.

Thanks for the comment. Frida was a delightful companion to her owners and to myself. Sadly, while she passed away mid-2023, this video will help to keep her memory alive - hopefully for many years to come.

Sorry for your loss. Losing a beloved animal companion of any type, that has been part of our lives for anywhere between 10 and 20 years (or more), is never an easy or quick process to 'get over' and move on from. Actually, the salad tastes delicious! As for the purslane, it is important to pick it when it is at its peak. Don't pick it too early.

@@yuegonghuamei6685 By the way, at the end of the purslane growing season the plant release thousands of tiny black seeds that look like poppy seeds. If left where they fall these seeds produce the next season's crop. If you have the time, patience and interest, the seeds can be collected and added to cakes, salads and pretty much any other meal you care to name. Aboriginal Australians collected the seeds, ground them into flour, and cooked them to make a type of bread.

Oh, okay. Sorry for my misunderstanding too. As for staying on the island for “months”, this is certainly possible if you have the money or income. Try and avoid the peak summer months of July and August which are the most expensive. Finding long-term accommodation outside of these months will be easier and cheaper. One of the best websites for comprehensive information about the island is: www.island-ikaria.com/ I recommend you spend some time researching your options. I don’t live on the island myself, so I can’t be of much help to you.

Why you did not kill insects
If you listen carefully to Irene's commentary, she explains the purpose of the insects during the video. To be brief, the bugs are needed to help pollinate the fruit. If you kill the bugs, you get no fruit!

This is how it should be. No glamour, just wholesome cooking. Like the way it was done down the decades. No fancy kitchen, no fancy untensils, no fancy studio. And never mind the noise in the background. I learnt from the video, thanks for sharing. Something new to try and it is healthy and home-cooked.
Thanks for the comment, Vernon. Yes, it is a regular family home, with adult kids coming and going throughout the day, and sometimes getting in the way, and the summer sound of cicadas constantly chirping in the background.

Is that chopped mint AND basil, or just mint? Looks delicious!
Sorry for not responding sooner. Irene uses mint only in this recipe, although as she says in the video, oregano could also be used.

Most commercial zucchini bought in your local supermarket have a standard short length. To get large ones of the size Irene is using you have to grow your own, or see if a local farmers market has them.
