So where does the outlet go? It disposes of the water into the sink? How do you know how much water to gauge into the inlet when turning the handle?
The water doesn't need to go down the sink, you can recirculate water in a bucket using a small pump. This way you can also monitor the temperature of the cooling water and lower it by adding ice.
As for gauging correct flow, you usually don't need a lot. So start with a gentle flow and check the column temperature with your hand as the distillation gets going, if the column is heating up you either need more flow or colder water.
