    I had dumb bread from a bakery in St. Thomas nearly thirty years ago. I thought it tasted like a coconut version of the Southern style shortcakes we make, similar to a sweetened biscuit (a US type biscuit, not a British cookie-type biscuit.) I began making my version when I got back home. My family loved it. After my children grew up and moved away, I stopped making it until today. I made it with coconut oil instead of Crisco and butter and used coconut cream that I thinned out. It is delicious! Your recipe is like the dumb bread from the Virgin Islands and very similar to how I make it. The other recipes I have found are yeast breads. I am sure that they are good but I am crazy about the taste and ease of making a quick bread. Thank you for sharing!

    I would like to share a bit of information concerning the "Johnny Cake". First of all the correct phrase is *JOURNEY CAKE* The word *journey* implies going on a journey, so it's a cake meant to be made in such a way that it can last while on a long journey. This is tied to the *BIBLICAL EXODUS* in the Book of *Exodus chapter 12* when the slaves were instructed to make bread without "leaven" (yeast, baking powder, baking soda or anything that that would cause the dough to rise). They were going on a long *journey* and the bread needed to be made in haste and without leaven so that it would last longer than if it was made with leaven. Because of dialect and pronunciation we had assumed the word meant "Johnny". But the indigenous people of Jamaica and those scattered throughout the world are the ones who continued that practice. However, throughout the years the meaning has been lost because *Journey cake* became an everyday staple for the descendants of slaves throughout the world. Our history has been hidden by those who fear that if we know the purpose it cultural practices we will wake up. Brothers and sisters there is no better time to wake up and stay awake because we see how dangerous the world leaders are. They care for no one so we have to educate ourselves. Don't expect the slave masters to educate us. *HAPPY PASSOVER AND UNLEAVENED BREAD* it is time to mentally and spiritually leave Egypt and go back to our FATHER.

    Looking good, except i wouldn't add back the seasoning that was on the raw fish , then u could omit the vinegar n lime. For the stew, use fresh seasonings
