And if you buy Indian spices for best cuisines then buy star anise, nutmeg, black cardamom, dried mango powder, cinnamon, green cardamom, cloves, cumin, fennel, tamarind powder or paste, saffron. These are some of the common ingredients. Mango powder is very under rated. But if you use it wisely in dal and some other curries, it gives a tangy taste to the dish.

It's so interesting that even though Dosa is about 2000 years old, but the classic masala dosa with the potato filling is pretty contemporary. Especially considering that potatoes were brought to India by the Portuguese in 16th century.
