I've made cinnamon (and strawberry) candy like this a few times. I think one of the reasons you got a "Jolly Rancher" one was because it had too much corn syrup (from that arbitrary dash you added to salvage it). And (if I had to guess) the reason you got a crunchy one after it is because the dash of extra corn syrup was added to re-cooked candy and it didn't mix as well as it did the first time around. I don't know if this is due to trying to soak into higher levels of caramelization, sugar that's already bonded to corn syrup, or if your cook time with the second go varied one way or another from the first (it also could have been any combination of those factors). I'm surprised you didn't do a trial-run or two with store-bought cinnamon oil first. (Hard candy making can be quite touchy.) Personally, I like my hard candy without any corn syrup, just plain sugar. It's a LOT harder (especially because I don't have that great a temperature control setup), but after a half dozen tries or so, you start getting a feel for it.
