How to make authentic and traditional New Mexican food.
I am a native New Mexican, historian, and foodie whose family settled in the middle Rio Grande Valley and the Tierra Amarilla/Abiquiu area of northern New Mexico, some as far back as 1598, when they first arrived with the Spanish explorer and Conquistador, Juan de Onate.
I was fortunate enough to have been raised by all four of my grandparents and to have known five of my eight great-grandparents. This allowed me to learn and experience their unique, ancient, and rustic ways of cooking and to delight in their delicious and passionate creations.
I grew up in Albuquerque surrounded by the New Mexican cooking traditions of my countless extended family members, of the parents and grandparents of my native-New Mexican friends, and of the many New Mexican restaurants that I grew up with and have regularly patronized over the years.
These videos are intended to preserve these traditions. I hope you enjoy them and the food itself!

What temperature were you using on the crock pot?
I grew up in El Paso in the 1960's. And my mother always used left over mashed potatoes to make taco's. So more than New Mexico (although some people think El Paso is more New Mexican than Texas)

Can these be frozen? I'm dying to try them but I know we won't eat them all.
They are still good after being refrigerated, but not frozen. The potatoes don't handle the freezing very well.

No, the beans should not be soaked at all.

How would you change this if you wanted to have chunks of pork in the chile?
I would make New Mexico carnitas separate and add the chile to them when you serve the meal. With pods, you can brown chunks of pork shoulder or similar cut and add, but I would not do that with powder, because it tends to get overcooked.

I have little time tomorrow and have to make red chile for enchiladas (company coming). I have never, ever, seen the use of a crock pot to cook the red! It blew my mind to watch your video. I am DEFINITELY doing this tomorrow! I was in San Antonio (NM) at Sichler's farm stand this past weekend - picked up fresh roasted red, sun dried red pods, and, so thankful, ground red! I'm doing your recipe with the ground tomorrow and can't thank you enough for the crock pot method! Thank you. It's going to save me some time. :)

Cooking time will vary at the elevation you live at !!?
No, that's a common urban myth. I have made them at a mile high and right at sea level. Trust me, it's the same.
Elevation causes more problems with baking than cooking.

Hello. I enjoy your videos. Love that you use your grandmother's recipes. I have a question. You have used and mentioned " lard" do you mean the kind you buy in the grocery store or could i use bacon fat. I always store my bacon fat after cooking.
Yes, bacon fat is great, but if I have it, I reserve it for grilling meat like ground beef or or chicken for tacos and burritos, not deep frying. Lard is always great though. Lard is much more consistent as far as flavor, because different bacons have different flavorings with smoke etc. You just find regular lard in the blue container at the grocery store and you're good to go!

So how do you make the refried bean dip stuff
I don't make bean dip; that's not New Mexican. If you want to make refreid beans, just get a greased pan on medium heat, scoop the beans in there, mash and mix until it makes peaks. Voila

Just fantastic! I've made this recipe several times now, and it's perfect! I've spent my life in New Mexico and Arizona, and I'll put this sauce up against any red chile sauce I've had! So easy, so delicious! I'll even make a batch and freeze it, just to have in stock. Thank you!!

I grew up in Grants in the '60's! Went to the Ceremonials in Gallup a few times. I still miss those days.
@@gradybird3336 . I went to school in 2nd grade at Washington's elementary in Gallup and the ceremonials were downtown.. Now they have them at red rock not the same
