Chicken Cordon Bleu Recipe
Ingredients:
2 chicken breast, boneless, skinless,
4 slices swiss cheese
4 slices of sliced ham
½ cup Aleia’s Gluten Free bread crumbs
1 Tbsp. Bob’s Red Mill 1 to 1 baking flour, gluten free
1 egg
2 tsp. Milk
¼ cup butter, chilled so you can slice thin pieces
Salt
Garlic powder
Directions:
Preheat oven to 425 degrees F.
Butterfly the chicken breast into 4 horizontal cuts (pieces) then lay a piece of plastic wrap on top of the breasts and pound with a meat tenderizer until they are ¼ inch thick. Season with salt and garlic powder.
Slice cheese into ½ inch wide strips and trim the ends so that when it is placed in the middle of the ham slice, you can roll it like a “burrito” making sure the ends of the ham are folded in so the cheese cannot leak out as it melts.
Place each ham roll at one end of the chicken breast and roll it up. I found that I didn’t need a toothpick to hold it closed but you can if you wish.
Set up the dredging station: 1 bowl with the egg and milk whisked to combine, and the 2nd bowl with the bread crumbs and flour mixed to combine.
Dip each chicken roll into the egg wash first coating all and then dipping each roll into the bread crumb mixture, spooning the crumbs over and making sure to fully coat each roll.
Place the chicken rolls on a parchment paper covered baking sheet and salt lightly with salt and garlic powder. The add very thin slices of cold butter on top of each roll. This will ensure the chicken browns up nicely and gets crispy.
Bake in a 425 degree F. oven for approximately 25 minutes. It’s difficult to use an instant read thermometer as the chicken is rolled with ham and cheese inside of it but you can try. I found that 25 minutes was perfect. You can always cut into one if you wish.
Serve with some potatoes, and grilled asparagus for a delicious easy meal!

    U don't cook eggs in a cast iron. Cast iron is better for bread or biscuits.

    I was going to make this, but after chopping my rhubarb, I only had about 2 1/2 cups. I added a few strawberries just to use them up. I cut your crust measurements in half and pressed it into a shallow tart pan, instead of the pie plate. It was a metal pan with removable bottom. I also used corn starch in the rhubarb instead of flour. My batch of rhubarb was the very pink variety. With the strawberry, it was pretty as is, and didn't really need the top crust. But I love streusel topping, so I mixed some up with brown sugar, a little flour and butter. Sometimes, Necessity is the Mother of Invention. Hope it turns out, OK! *UPDATE* Turned out great! Next time, I am going to use melted butter in the crust instead of oil, as someone in the comments suggested. This is a "keeper" recipe --thanks much!

    Yummy, I prefer La Victoria's Medium Taco Sauce for a mass produced Sauce, although Cholula Sauces are very good and they only need a couple of drops to get the KICK . Salsa in Tacos and Burritos tend to make a dripping mess, in Southern California where I live, the Locals pour on the Salsa before each bite on a Burrito rather than add it when building and wrapping, it keeps everything from getting soggy, after awhile it just becomes second nature, take a bite or two and add Salsa, if the Salsa is too hot you haven't ruined the whole burrito, just try another Salsa for your next bite. Breakfast Burritos in Southern California are made in EVERY Grocery Store, they really are one of the BEST foods for those on the go in the morning. During the Covid I was an Auditor and I had to travel to numerous Grocery Stores in my area to make sure Items were on the shelf... The Burrito was what I lived on during the day, because I could only eat in my Car back then, and a Burrito was much easier than Burger, Fries and a Drink in the Car.
