Ingredients
*Any protein of choice. I used fresh tilapia, cooked. Shrimps and toolo beef
*okro (cut and blended)
*tomatoes
*Aromatics blend(onion, garlic, ginger, and Jamaican hot pepper)
*baking soda
*any seasoning of choice
*Palm oil
Process (Okro)
*To a saucepan with a cup of water, add half a teaspoon of baking soda, blended/cut Okro and diced onions. Then cook for 10 minutes on low to medium heat.
NB: Cooking Okro for a lengthy period of time reduces the rate at which a sliminess could be achieved.
Okro soup
*Cook toolo beef (salted beef) and tilapia in aromatic blends for 6 mins.
Fry some chopped onions in palm oil for 3 mins then add aromatics blend. Cook for additional 7 minutes.
*Add cooked toolo beef and fry for 5 mins before adding cooked shrimps
*Add diced tomatoes, stir and cook for additional 5 mins before adding fish/meat stock. Then allow to cook under medium to high heat for 7 mins. Stir to prevent sauce from burning
*Add cooked tilapia. Stir and add cooked okro.
*Adjust seasoning to taste and allow to simmer for 7mins.
NB: I did not add salt to dish because of toolo beef(salted beef).
