We are the Hamilton family - Ty & Rick.
We started doing BBQ competitions in the early 2000’s and have competed all over the country - Montana Pitmaster Classic, Jack Daniels Invitational, the Open American Royal World Series of Barbecue and tons more. Then, a few years ago we decided to make Montana Outlaw BBQ rubs.
We want to share the love of cooking and get people together to eat. We’d like to help inspire others to have success with barbecue with Outlaw-style recipes. Because there's nothing better than gathering with your friends and family around really good food, while enjoying the beautiful outdoors!

TELL-ALL Competition BBQ Class | Montana Outlaw BBQ
We are hosting a Tell-All Competition Class happening March 31-April 1 in Billings, MT. As one of the most decorated teams in the Pacific Northwest, Rick & Ty will teach you their championship winning, no holds, KCBS competition cook from start to finish. You'll learn all the tips & tricks that earned them a score of 711, the title of 2016 Reserve Grand Champion at the American Royal World Series of Barbecue Open, 7 Grand Championships, and 6 invitations to the Jack Daniel’s World Invitational Championship Barbeque. The one thing I hate about brisket is you start off with 12 pounds but end up with five..
It really is a pain! Especially when you're selling it - it's hard for customers to fathom how much renders away.
One backyard bbq event I’ve been to - did not allow any seasoning (only trimming) prior to the event. The chicken is inspected in the morning - then off you go for turn-in late afternoon. Would you still brine the chicken in such an instance.

Yes, we let it rest for at least an hour before slicing.
Do you heat the sauce prior to dunking the chicken?
Yes, we heat the sauce prior to glazing the chicken, then place it back in the smoker for 10 minutes to set it.
Thanks for all your videos. Can you explain why it's important to wrap tightly? Some techniques use a covered foil pan which isn't tight. I'm just interested in the theory behind it. Cheers
We wrap the pork tight because we don’t want to steam it. Excess steam will dry the meat out. We want the liquid in the wrap to be held tightly around the meat more like braising.
weight on the brisket?
This brisket was likely 10-15 lb. When we do comp, we use ~20lb briskets from Marbled of Montana - we sometimes use the leftovers for recipes like this Brisket Chili.
Was it at 300° the whole cook?
Yes, we smoke it at 300 degrees for the full 5.5-6 hours.

Uncovered the whole time unless the color begins to get to dark to quick then I will lightly foil to protect the chicken.
