How to make a Buttermilk Fruit Cake

How to make a Buttermilk Fruit Cake
Buttermilk Fruit Cake
Timings.
• Prep Time: 10 mins.
• Baking Time: 50 mins.
• Total Time: 60 mins.
Servings. 10
Ingredients.
• 1 ¾ cup (300g/10 ½ oz) Plain/All Purpose Flour
• 1 tsp Baking Soda/Bicarbonate of Soda
• ½ cup (125g/4 ½ oz) Butter, frozen and grated
• ½ cup (125g/4 ½ oz) Caster Sugar.
• 1 tsp Mixed Spice
• 2 tbsp (25g/ ¾ oz) Mixed Peel (optional)
• 2 cups (300g/10 ½ oz) Mixed Fruit or Sultanas and Raisins.
• 2 Medium Eggs
• 1 ¼ cups (300ml/10.14 floz) Buttermilk.
Oven Temperatures:
Preheat the oven:
• Fan Oven: 160°C/320°F.
• Oven: 180°C/360°F.
• Gas Mark 4.
METHOD.
1. Grease and line a 2Ib loaf tin and preheat the oven to the above temperatures.
2. In a bowl mix together the flour and baking soda.
3. Rub the grated butter into the flour with your fingertips until it resembles fine breadcrumbs.
4. Add the sugar, mixed spice, mixed peel if using and the dried fruit and mix them in.
5. Beat the eggs and add to the dry ingredients mixing until combined.
6. Pour in half the buttermilk and mix it in add a little at a time until you get a drop consistency.
7. Spoon the mixture into the prepared cake tin.
8. Bake in a preheated oven for 40-50 minutes, check with a skewer to ensure it’s fully baked. If it needs longer leave it in until the skewer comes out clean.
9. Allow to cool in the tin for 10 minutes before removing from the tin and placing on a wire rack to cool completely.
10. Cut and enjoy with a cup of tea.

    I've noticed other videos (especially american) they just boil everything separately and then mix it after. Instead of cooking it slowly in one pan layered with the leaves on top like a lid. I think your way looks the most proper and wondered how you think the other ways would taste different? Plus you don't fry the onions so they will taste different to. Im sure your way is the best

      How to make 3 Ingredient Scones 3 Ingredient Scones TIMINGS: • Prep Time: 5 mins. • Cook Time: 15 mins. • Total: 20 mins. SERVINGS: • 8 Scones. INGREDIENTS: For the Scones: • 2 cups (325g/11 ½ oz) Self Raising Flour. • ½ cup + 3 tbsp (160ml/5.41 floz) Double/Heavy Cream. • ½ cup + 3 tbsp (160ml/5.41 floz) Fizzy Lemonade (7up, Sprite etc) Optional Extras: • 2 tbsp Caster Sugar. • 1 tsp Vanilla Extract. • 1 egg or a little milk to glaze. To decorate: • Strawberry/Raspberry/Blackcurrant Jam. • Whipped Cream. • Icing/Powdered Sugar to dust. METHOD: 1. Preheat the oven to the following temperatures. 200°C/400°F [Fan Oven] 220°C/440°F [No-Fan] Gas Mark 7. 2. Line a baking tray with greaseproof paper. 3. Place the flour in a medium-sized bowl and add in the cream and fizzy lemonade. 4. Mix together until a soft dough forms, be careful not to overmix. 5. Place the dough on a floured surface and fold once or twice before patting it into a round shape about 4.5 cm thick. 6. Using a 2 ½ inch/6 cm round cutter cut the scones out. 7. Place on the prepared baking tray and brush with egg wash/milk. 8. Bake for 15 minutes until the tops are golden brown. 9.     Oh, I am so glad that I happened upon this video. We visited Ireland (my lifelong dream) in 2014 and 2019. We first discovered Irish vegetable soup on our first day of driving through Ireland back in March, 2014, in Virginia, County Cavan (of course, since I am a Reilly!). We fell in love with this soup and ate it all through our travels around the country. When we returned in 2019, we just had to have Irish vegetable soup again, so we ate it wherever we went (even on Inishmore, Aran Islands). It went perfectly with the thick brown soda bread and sweet butter. Thank you so much for showing me your version of Irish vegetable soup. Here it is Mammy’s Irish Sponge Cake Timings: • Prep Time: 15 mins. • Cooking Time: 15 mins. • Total Time: 30 mins. Servings: 8 slices. Ingredients: • ½ cup + 1 tbsp (115g/4oz) Caster Sugar • 4 Medium Eggs • 1 tsp Vanilla Extract (optional) • ½ cup + 3 tbsp (115g/4 oz) Plain Flour/ All Purpose or Cake Flour if in the USA For the Decoration. • ½ tbsp Icing/Powdered Sugar • ½ cup (125 ml/5.07 fl oz) Whipped Fresh Cream • 4-5 tbsp Strawberry Jam • 4 Fresh Strawberries Oven Temperatures: Preheat your oven to the following temperatures: • 160°C/320°F [Fan Oven]. • 180°C/360°F [No-Fan]. • Gas Mark 4. Method: 1. Preheat the oven to the above temperatures and grease and line two 8”/20 cm sandwich tins. 2. Add the eggs , sugar and vanilla extract (if using) to a large bowl. The vanilla extract is not a requirement for this recipe but can be added if you wish. 3. Beat for 5 to 7 minutes until the mixture has doubled in volume and is thick - at this stage the whisks will leave trails in the mixture . I also check that the mix is ready by using the whisk to draw the number 8 on top of the mixture - if the number 8 sits on top of the mixture and doesn't sink the mixture is ready. If it sinks, continue to whisk and check again. 4. Start adding the sieved flour - add about 1 tablespoon at a time and fold it in gently with a metal spoon (don’t use a wooden spoon and don’t whisk it in) until there are no flour clumps remaining. 5. Repeat until all the flour is mixed in. 6. Divide the mixture evenly between the two sandwich tins. 7. Bake in a preheated oven for 15-20 minutes or until springy to the touch. 8. Cool in the tins for 5 minutes, use a knife and run it also the edge of the cake and side of the tin before turning the cake out onto a wire rack . Before lifting the tins off place a wet cloth over the tins for a few minutes or rub the cloth on the bottom and side of the tins. This will helps to remove the cake from the tin. 9. When the sponges are cool, spread strawberry jam over one side and top with freshly whipped cream, place the second sponge on top. 10. Sprinkle over a little icing sugar or for a more effective look place the wire rack on top of the cake and sprinkle the icing sugar over it and then remove the wire rack. 11. Mmm, Scrummy!!!

    I had a go at making treacle bread (again) yesterday and made a right mess of it. The recipe was from a lady (on Facebook) who makes it twice a week. She might be great at making it but I'm not, I tried the other year with a different recipe and screwed that up as well. My Irish mother made it and I loved it. She knew exactly of how much of each ingredient to put in, no weighing, nothing, but then I'm the same with pastry, not having to weigh anything. I once asked her to show me how to make it. I just watched, taking no notice as to what or how. After she died in July 2008, my brother and I took her ashes (and my dad's, he had died 8 years before and I'd saved them) over to Ireland. Half of each were scattered on the land, the other two halves put together in my dad's casket and buried in her mother's grave. We were staying with an aunt, my mother's sister. I asked her to make me some, again with the intention of learning. Sadly, I made no notes - again. I reckon Irish women in many cases grow up learning how to make the stuff as a matter of course. I will give this a shot, it looks delicious. You never know, I might succeed this time.

      Hi Bridget lovely to hear from you. My mum didn't weight anything either just did it by eye and she made the best scones. I watched her make them so many times and I still can't get them like hers. Unfortunately she has dementia now so have lost the chance to actually make as she supervised. Where in Ireland was your mum from? Lovely that you got to bring your mum and dads ashes home. Did you mum ever get back to Ireland after she emigrated? I assue it's the US she went too? So many Irish never came home just couldn't afford to, lots of my grandads family went and were never able to come back. Now to talk about treacle bread. This Treacle loaf is like a sweet cake, it's really good but I don't think it's the one you want to make. I have two other recipes on my channel one one for Treacle Scones and they are amazing, lots of lovely spices in them and you can very easily make it into a loaf of bread just by not cutting the scones out. The other treacle bread recipee is Treacle Bread using half white and half wholemeal flour but you can use all white if you like. I'm making the treacle scones today for my neighbour her daughter is getting married tomorrow so just wanted to do something for her. Here are both the recipes and I hope you have luck with the recipes. Flour can be different abroad and not the same as here I do know that. Another tip don't add all the liquid together do it in stages until you get the correct dough consistency. Let me know how you get on. My mum was from Co Roscommon, just a few short miles from the border with Co Mayo, coming to England around 1947 to work as a nanny/home help, meeting my dad Dec 1949 and marrying 11 months later. I came along in October 1952 then my brother in May 1955. We went on holiday to Ireland late summer 1958 then not again until 1970, although my mum went late 1966 for a month to convalesce from a major operation. She and my dad went over several times after that, most years - he loved it there so when they'd both died, I felt it appropriate to take his ashes as well. They are now arguing the toss in my dad's casket which is in my grandmother's grave for all eternity. I have relatives in the USA, descended from those who had emigrated from Ireland in the 19th century, some probably during the famine. I will give this a shot, determined to have some gorgeous Irish treacle bread, spread with butter and washed down with a mug of tea, The recipe I uaed the other day was very different to this although whether made by eye like my mother and her sister, or following a recipe exactly, so long as it turns out ok that's the main thing. My daughter in law is also going to try this. Thanks again. xx

Some of the ingredients differ from those in the recipe I tried the other day but I will definitely try this, I just need to get some Irish butter. Incidentally, my aunt used to make us butter years ago using her own churn etc and send us a block. I have never tasted butter like it and I never will again. Absolutely wonderful, same as Irish potatoes. She also used to send us a turkey at Christmas which I helped my mother clean out. Couldn't send us these things now. How lucky am I to have had an Irish mother. xx

      Ah Bridget your story about the turkey in the post is similar to a strory of my mum and dads. My mum and dad are both from county Leitrim and met in London in the Galymore in Cricklewood. The married over here and lived for a few years in London before coming back when my oldest sister was born. My Granny (dad mum) use to send them a turkey in the post at Christmas. One Christmas it was very late arriving and my mum met the postman and he said "you have a humming bird here". I couldn't believe turkeys were posted over so it was obviously a thing then. That was around I964. Definately couldn't do that nowadays. Yes you were luck to have an Irish mum and to get back to Ireland. Did your mum keep her Irish accent? My Uncle lived in Cricklewood for 60 years and still had his Irish accent, they say it's a hard one to loose x

      The recipe is posted with the video but here it is Servings:* Makes 12 puddings. *Ingredients:* • ½ cup + 2 tbsp (100g/3½ oz) Plain Flour. • ¾ cup + 1 tbsp (100g/3½ oz) Cornflour/Cornstarch. • 6 Medium Eggs • 12 tsp Sunflower/Vegetable Oil. • 1 ¼ cup (300ml/10.14 floz) Milk *Method:* 1. Preheat your oven to the following temperatures: • 200°C/400°F [Fan Oven] • 220°C/440°F [No-Fan] • Gas Mark 7. 2. Add a tsp of oil to each of the holes in the muffin tin. 3. Place the tin in the oven for 15 minutes until the oil is really hot, and spitting. 4. Whilst the oil is heating, whisk/beat together the plain flour, cornflour and eggs in a large mixing bowl. 5. Once fully combined and no lumps, gradually add the milk a little at a time and mix together. 6. Pour the batter into a jug so it's easier to pour into each hole. 7. Working quickly, remove the muffin tray from the oven and fill each hole ¾ ‘s of the way full. They will sizzle a little and get them back into the oven as quickly as possible. 8. Bake for 15-20 minutes until golden and risen. *(DON’T open the oven door during baking as this will ruin them!)* 9. Once baked remove from the oven and serve up with a lovely roast dinner making sure to use lots of gravy. 10. Mmm Scrummy!!!

    I wonder if you could just use whiskey instead of stout - I hate to open a can and only use 2 T of it...I don't drink, so it would go to waste. The cake looks delicious.

      Hi there the cake is called a porter cake because of the guinness . if you decide to use whiskey just add 100mls instread of 300mls. This is a recipe for a christmas cake I make it's a bit richer than the porter cake but nice too x czcams.com/video/Ok55-q8AQ3A/video.html

    Hi Katrina, I can't wait to make this cake! It is almost impossible to find sultanas here, so I will use golden raisins. Glace cherries are mostly only found at Christmas time, but we love them. I might try maraschino cherries. What do you think about using dried currants in place of raisins? Anyway, for sure, I can get my hands on Guinness Stout! 😄

      Currants and raisins will be fine Laura any dried fruit really work in it. Maraschino cherries will be great in it too. Good that you have no problem getting the Guinness Stout, it's everywhere. Enjoy hope you like it x
