I used be the same as you George and think fuck it I’m not a chef why bother making my own sauces and all that shite. I’m just trying get fucuing massive. But as time has gone on, making stuff from scratch it just fun and it tastes banging😂 like making my own pasta sauces and I’m looking in to making my own pickles and fermented stuff like kimchi. 1 tip. After eating like this for decades now you have to buy a good food thermometer. Most people absolutely destroy their chicken over cooking it. For example supermarket instructions on chicken breast says 25 or 30 minutes and it’s actually up to cooked temp in 18. Also as others said shelf stable kimchi tends to be missing a lot of the good things you spoke of. A good Asian supermarket has it fresh in the fridge and it’s night and day plus they also have other cool products to try out.

Buy kimchi from an asian store! It takes a lot more authentic, likely a lot less processed and you can buy much bigger portions which are way better priced!

The fresh tubs of kimchi are much better normally near the dips
