Deliciously Easy Homemade Cream Cheese Recipe!

Deliciously Easy Homemade Cream Cheese Recipe!
Ingredients
1 full container of 2L milk (3.25% best, but 2 % also ok) 8 cups
2 lemons (8 tbsp of lemon juice) 20 ml
Directions
1) start by squeezing the juice of 2 lemons to have that ready
2) Place a large pot over medium high heat- once pot is heated up add the 2 L of milk
and continuously stir until it comes up to a boil and begins to thicken and froth at the top. This will take about 15 mins or so (if you take your milk out about 30-45 mins before starting then it may boil up faster VS straight out of the fridge).
Be sure to continuously stir and make sure you do not let any milk burn at the bottom of the pan.
3) Once it gets to a full boil(bubbling) let that go for about 3 mins and then turn off the heat but keep it on the burner.
4) Then add the lemon juice.
let it react for 1-2 mins and watch what happens.... it will begin to separate and clump up.
5) Once it has clumped up enough you will strain it through a siev that is lined with a cheese cloth sitting over a heat proof bowl/pot etc.
6) Strain it through and let it fully drip out as much liquid whey as possible- help move it around with the spatula to let the steam out. You will see you will end up with the same amount of liquid as you had in milk from the start.
7) Once it has cooled enough to handle, you will squeeze the rest of it by hand to remove as much liquid (whey) as possible.
8) Once you are left with your cheese ball, you will add it to a food processor and give it a blitz blend for 30 seconds or so to break it apart. Then you will begin to add a tiny bit of the strained out whey a bit at a time and keep blending until you reach the desired consistency you like for your cream cheese. (more firm, or semi firm, more soft etc).
9) Once done, you will add it to a container and place in the fridge where it can keep for up to 7-10 days! if it will even last that long LOL
now some people like adding a hint of spices (herb/garlic to make flavoured cream cheese.... do as you wish) this is showing you the base of a plain kind, then let your imagination run wild.
Once you make it yourself, you will taste what homemade and fresh is and you will never go back.

Hello west coast 👋🏼 😃 ❤ isn’t coffee cake legit the best!!!! Hmmm the pan no doubt most probably the bay but it’s been around for years! Now a days you can find anything on Amazon! However that pan is usually used the reverse way we used it lol 🤣 as it sinks below usually it’s used as a filling topper…. But we just used it for a different shape ❤

No, we usually do blueberry & lemon and fall /winter only with cherries and cranberries but any fruit will do as long as it’s 4 cups worth for the size dish we have 9x13 2 inch deep and ingredients with measurements listed 🫶🏼 Raspberry would be delicious no doubt!!

Just so you know there is no problem with fresh blueberries- we just use for convenience frozen as this is a fast recipe and no thawing needed at all for anything (butter/ egg of frozen blueberries) as long as you have 4 cups worth of fruit for a 9x13 deep dish pan you will be fine 🫶🏼

Just wanted to ask - do you have any simple recipes for a breakfast casserole that I can make for my doctor's group? Something delicious and easy to prepare - possibly the night before and just put in the oven the next morning - my appointments are usually in the morning, so that's why breakfast. @@lovewhatueat Yes, I found a few and have made them for the office. They were a big hit! I made a hash brown, sausage, egg and cheese casserole which everyone loved - made pound cake one month, then French apple cake the next month (huge hit), then the African cinnamon bread (another hit), plus too many to mention. This is almost 3 years now with my eye doctor and so I've made lots of stuff for them and my son-in-law gets so aggrevated because I never get a thank you or anything. But, I finally got a card from the girls and Dr. Rothbaum to thank me for ALL the wonderful things I've made for them and said that I spoil them! So, that made me very happy and proved my son-in-law wrong. I do these things from my heart not that I want anything in return - that's what I keep telling him. I enjoy doing it and it make me very, very happy when they enjoy what I bring to them. Ha Ha Ha Ha Sorry for the long story. You have a wonderful Sunday, as well. You can make them any size you wish, for us we piped or hand rolled about a tablespoons worth 🫶🏼
Wow. I just had to try that cling wrap trick to form burgers after seeing this video. We just finished eating dinner and I have to say for the first time ever my burgers held their shape on their own without having to smash them down so they remained juicy and didn’t turn into puffy hockey pucks, which is usually what happens to my burgers 😂. Thank you ladies.
