🐰爆餡榴槤小兔兔冰皮月餅Durian Snowy Mooncake🌕
材料及份量(10個):
冰皮材料:
📌粘米粉(Rice Flour) 35克
📌糯米粉(Glutinous Rice Flour) 40克
📌澄麵粉(Wheat Flour) 20克
📌牛奶(Milk) 140毫升
📌白砂糖(White Sugar) 35克
📌菜油(Rapeseed Oil) 20毫升
📌抹茶粉(Matcha Powder) 2克
📌紫薯粉(Purple Sweet Potatot Powder) 2克
📌南瓜粉(Pumpkin Powder) 2克
📌士多啤梨粉(Strawberry Powder) 2克
📌加工熟糯粉(Cooked Glutinous Rice Flour) 適量
📌榴槤(Durian) 250克
做法:
①將榴槤拆肉,分成每份25克,放上保鮮紙包好滾圓,再放入雪櫃冷藏4小時
②將粘米粉、糯米粉和澄麵粉過篩,並加入白砂糖拌勻,慢慢加入牛奶和菜油,徹底攪拌均勻
③過篩去粉粒並倒入盤中,並蓋上保鮮紙,用牙籤戳幾個洞,再用大火隔水蒸約20分鐘
④蒸好後取出後即趁熱用膠刮刀刮鬆,並放入保鮮袋搓揉或不燙手的時候帶上膠手套搓亦可
⑤將粉糰分為一大四小份,然後四份分別加入色粉並搓揉均勻即可
⑥將不同顏色的粉糰混合在一起(每份25克)再壓平,然後取出已冷凍好的榴槤餡,將餡料放在粉皮中間,並用虎口收口滾圓
⑦放入已沾上加工熟糯粉月餅模中,按壓出月餅形狀並脫模
⑧放入盒中並加蓋密封,冷藏片刻即可享用
STEP:
①Cut the durian into 25g portions, wrap it in plastic wrap and roll it into a round shape, then put it in the refrigerator to refrigerate for 4 hours.
② Sift the sticky rice flour, glutinous rice flour and plain flour, add white sugar and mix well. Slowly add milk and vegetable oil and mix thoroughly.
③Sift out the powder and pour it into a plate, cover it with plastic wrap, poke a few holes with a toothpick, and steam over high heat for about 20 minutes.
④After steaming, take it out and use a rubber spatula to loosen it while it is still hot, then put it in a fresh-keeping bag and rub it, or you can rub it with rubber gloves when it is not hot.
⑤ Divide the dough into one large and four small portions, then add color powder into each of the four portions and knead evenly.
⑥Mix dough balls of different colors together (25 grams each) and flatten, then take out the frozen durian filling, place the filling in the middle of the dough, and use a tiger's mouth to close it into a round shape.
⑦Put into the mooncake mold that has been dipped in cooked glutinous powder, press out the mooncake shape and remove from the mold
⑧Put it in the box and seal it, refrigerate for a while and enjoy

What recipe do you use for the dough? I don’t like the recipe I currently have for this type of cookie, but I love my cookie cutters! Apologies if it’s posted elsewhere and I missed it!
