After adding the brandy do you need to add anything like potassium sorbate? Is the brandy alone enough to stop fermentation so we don't have exploding bottles? Also, in terms of taste, did you/could you backsweeten?

I just let Juice sit and then I added fruit and honey from a local honey frame straight from the honeycomb. That worked a lot. I did use yeast. I did use organic oatmeal. To help things separate. I just let everything sit and I did add a tiny bit of water. The way I did it. worked really good. I would shake the bottle and burp the air out. It wasn't bad at all. WHAT I DID LEARN YOU CAN'T MESS AROUND WITH HOOCH. STUFF IS STRONG AND DANGEROUS. I think becoming a professional is better.
