Paksiw Na Pata
Another easy to make Filipino favorite dish - Paksiw na Pata (Pork Knuckles). Though the procedure is not that straightforward, overall the complexity of this dish is very easy. The combination of the sweet, sour, and tangy taste will surely delight your taste palate.
I hope you'll try this recipe one of these days when you don't have any idea on what to prepare for your family.
Ingredients:
1 Kg Pork Pata (Pork Knuckles)
3 Pcs Laurel Leaves (Bay Leaves)
1 Tsp Pepper (Cracked)
4 cloves Garlic
1 Pc Onion (Large)
25 Grams Banana Blossoms
2 Tbsp Cooking Oil
1/2 Cup Brown Sugar
1 Tbsp Apple Cider Vinegar
1/2 Cup Soy Sauce
1/2 Cup White Vinegar
Salt and Pepper
Directions:
1. Soak banana blossoms in warm water prior to cooking in order to hydrate and remove the preservative/bitter taste of the blossoms.
2. Using a pressure cooker, fill with water just enough to cover the pork knuckles. Cook for 20 to 25 minutes only. DO NOT OVERCOOK to prevent the pork knuckles from disintegrating.
3. After 25 minutes turn off stove and let the pressure cooker cool down and let the pressure/steam release on its own.
4. Once pressure cooker is ready to open (steam has completely released), carefully remove the cover and remove the pork knuckles.
5. Do not throw the soup stock as this will be used as the base for the sauce. Strain and set aside.
6. Prepare the onions, cut in strips and mince the garlic.
7. Wash off the banana blossoms 2 to 3 times to fully remove the bitter taste of the preservatives.
8. Heat saucepan and put cooking oil
9. Saute onions until translucent together with garlic
10. Stir in and sear pre-cooked Pork Knuckles until brown
11. Pour in reserved soup stock, together with brown sugar, apple cider vinegar, soy sauce and white vinegar.
12. Cover and bring to a boil, stir occasionally to prevent the meat from sticking to the pan
13. Feel free to add salt and pepper on your desired taste.
14. Once the sauce/liquid has reduced, throw in the banana blossoms
15. Wait for 5 to 10 minutes more or until the sauce has thickened/reduced.
