Red Snapper is one of the most prized catches along the Mississippi Gulf Coast and particularly flavorful when prepared over a live-fire. When I can find it fresh (i.e., never frozen), I grill it in a basket about an inch over hardwood coals; it is amazing. Unfortunately, sometimes it's hard to come by fresh, and I prefer to sear it on black clay, as I did here for you. Enjoy!

    Several errors committed here, never cover steak when it's resting; didn't need to cut the steak before cooking it; didn't measure temp with a meat thermometer; sticks will burn and impart bitterness. Sorry bro but this is a fail!

    The Porterhouse appeared to be virtually void of any marbling. I've grilled steaks from 3 year old, grass fed, heavy aged beef that had lots of marbling. and ate like a dream!

    I’ve bbq’d chorizos on my dad’s ranch in Argentina. Tip I learned from experienced gauchos: move the fire and keep the coal bed over the already-hot ground.

    1st off, thank you for the video. I happen to come across it while looking at the Grillworks grills. It is a superb video in quality and content. Def a Med-rare to Med steak lover myself. We had their Architectural grills in our hotel restaurant. You used a lot of quality products as well! My only question, as I haven't researched it yet, is the peanut oil on the wood? I haven't ever seen that before on any cooking show or video. What does that do for the wood firing process? Thank you in advance....about to check out your other videos!
