Iam a newfoundlander from the west coast and most of us always use sea water the only time we use sea salt is when we had to much rain because the salt content is weak . I also know that some people also add a bit of sugar .

Before you put the lobsters in the pot to get rid of that too vein in the lobster tail you prick it with a knife right at the end of the tale and let it drain out before you cook them and then you put lobsters in boiling water when it comes back to boil cook them for 15 minutes you will always have well-cooked Josie lobster after it goes back to boil cook it for 20 minutes is 5 minutes too long they will be overcooked

You ate the tail vein which is actually the poop tube connecting to the lobsters anus. Not so tasty lol. The red is lobster eggs or roe and the green is tomalley or liver and pancreas, all good to eat or to make dips or spreads.

If you break the tail off from the body and take the little flipper tails off the end, you can put a fork in from the tail end and push the entire tail meat right out.

I live in northern New Brunswick and my best buddy fishes lobster and we cook 100-200 pounds each week. We put a cup of coarse salt per gallon of water and cook them for 18 minutes once they are back to a boil. We always put them in the pot upside down. Then we have a fish pan with about 10 gallons of cold water with about another cup of salt and we put some frozen ice bottles in the water to cool them off fast and it keeps the meat from sticking to the shells. Then we set them on a rack upside down to cool for another few minutes after they come out of the cold water. Everyone loves them! Enjoy!

OK sorry to tell you the red stuff in the female lobster is eggs that have not come out yet .if you take your lobster when they are done cooking and have a tub of cold water but them in it for 5 or 10 minutes then drain the water. By butting in cold water, coming from hot water they will suck in water.this coming from a old lady who worked in a lobster factory. Worked great for me.

I use to do mine the same way. Now I also add 3 tablespoons of sugar to the water with the salt. (Just learned this on my last lobster boil). only thing I do different is I bring the water to a boil, after salt and sugar has been added and stirred, add the lobsters, then wait until water is boiling again and then start the timer for 20 minutes... I'll never boil lobsters again with adding the sugar too...
