BROOKIES
Brookies are half brownie and half cookie made from marbled layers of fudgy brownies and chocolate chip cookie dough. Delicious treat for afternoon snack and perfect for all occassions.
INGREDIENTS
* BROWNIE BATTER *
1 stick Unsalted Butter
3/4 cup Dark Chocolate (roughly chopped)
1/2 cup Granulated white sugar
1/2 cup packed light brown sugar
1 tsp Vanilla extract
2 large eggs
1/4 teaspoon iodised salt
1/8 cup unsweetened cocoa powder
1/2 cup All purpose Flour
COOKIE DOUGH
1 stick unsalted butter
1 1/4 cups All purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon iodised salt
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 large egg
1/2 cup semi sweet chocolate chips
Pan size: 12x9x2 inch
Baked in a preheated oven at 150 degrees C for 40 to 45 minutes
*Ovens have different attitude, know your oven or you can use an oven thermometer for accurate temperature.

    Amazing! Question.. once decorated, bagged and sealed, does the fondant remain soft or becomes hard? I’ve never been a fan of it and the thought of biting a cookie with fondant makes me cringe. Sorry, it’s a sensory thing for me. Thank you!!!

      Hi Brittney, oh wow I would love to do an encanto themed cookies! 😊 I use Over the top fondant easy to work with and it taste amazing, a 500 gram fondant will cover 35 to 40 cookies approximately, depending on the size of your cookies and thickness of your rolled fondant. Hope it helps 🙂

      @Emma Louise Thank you! Yes, you can freeze them but make sure you put them in their individual bags (heat sealed bags), and put them in an airtight container and freeze. They will come out looking and tasting as good as the day you put them in. Let them sit on the counter in the container for a few hours, I usually take mine out the night before. Hope it helps...

      Hi, I rolled my fondant about 2mm to 2.5mm thickness. I did'nt add tylose to fondant when I am making fondant cookies, so it's not hard and make sure to store cookies in a heat sealed bag or in an airtight container. Thanks

      Hi, you can store the fondant cookies in an airtight container for up to 2 weeks, but best if you packed them individually in a sealed cello bags to prevent moisture. 🙂

    So cute !!! Should I wait until the fondant dries to put it on the cookie ? Is it OK to package if fondant is kind of soft? Thank you

      Hi, you can stick the fondant on top of cookie while fondant is still soft.. I usually store the fondant cookies in a sealed container overnight and pack in a heat sealed cello bags the next day, hope it helps 🙂
