From the USSA (Candy)..... You ARE a v. dignified individual....., down to earth, real, honest, which are vastly more important than anything in life, definitely in the coffee production business. SO many arrogant dolts occupy the industry - above all the USSA. I know the former Officine Vittoria product line like the back of my hand.Their design is/was exceptional, especially one model that perhaps no more than 20 people in the world have any familiarization with. It was the finest drum unit ever designed, made. Stay the course, be fanatical toward consistency. It IS abundantly clear you know what IS right, how a roast should be. Avoid ridiculous trends as proffered by the beyond pathetic, myopic hipsters. Take care.
