Pineapple Upside Down Cake
I used the canned pineapple in my pineapple upside down cake. Both work well, if using fresh be sure to blot it dry. You may need to cook the cake a bit longer if using fresh.
You will need:
1/2 cup butter (113 g)
1/2 cup brown sugar (100 g)
Enough pineapple slices to decorate
Cherries to decorate
For the cake:
1 cup flour (120 g)
3/4 cup sugar (150 g)
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 cup butter, softened (55 g)
1/4 cup milk (60 ml)
1/4 cup pineapple juice (60 ml)
1/2 tsp. vanilla
1 egg
Melt brown sugar and butter over medium heat in sauce pan until bubbly, set aside.
Sift together flour, sugar, baking powder, and salt in large bowl.
Add softened butter, milk, juice, and vanilla. Mix on medium speed for 2 minutes.
Add egg, mix another 2 minutes.
Pour butter/brown sugar mixture into cake pan. Arrange pineapple and cherries in mixture. Gently pour cake batter over pineapples and bake for 35 minutes at 350.
Let cool at least 30 minutes before inverting cake onto serving plate. Enjoy!
Helpful tips: Fresh pineapple should be blotted dry if used. Line oven with foil to prevent leaks ticking to oven floor. This cake recipe can be doubled easily, if making plain cake just use more milk in place of pineapple juice.

Yummy and easy! Creme brulee is a breeze to make at home. My recipe fills six 4-ounce ramekins, but if you have 8-ounce ramekins (or just want more) simply double the recipe.     Great cobbler! It makes sense that National Peach Cobbler day was created to promote canned peaches--it's way too early for fresh peaches! Nothing wrong with frozen peaches. I used frozen peaches in my peach pie video, and I honestly think frozen fruit is often better: it's much more consistent in terms of quality. Thanks for the tip of not to stir and to remember that the dish is hot. I have made a smaller version of this using 1/2 butter and 1/2 nonfat Greek Yogurt. While it worked, the crust was a bit sour and spongy. It was crisp, but not quite as crisp as yours...I think the fat is there for a reason. Once again, great recipe!

      Thanks, Parnell. I've burned myself one too many times forgetting a pan is hot, lol. I love Greek yogurt, but it does tend to sour things up a bit in cooking. I am a big fan of frozen fruit in general. I even take fresh blueberries and freeze them to snack on.

      @@livingwithleigh4032 lol cooking can be dangerous! Greek yogurt does sour things. Sometimes it's desirable, other times, not so much. I have frozen black grapes in my freezer right now: they were so good, I had to freeze some last summer!

      Fresh pineapple is the best. If you use it, remember to bake longer and blot it dry. In my experience the juice makes the batter take longer to cook. Or it could just be my oven. Thank you!!

      I was just taught this method and I never questioned it, lol. I think it could be because you want the batter to rise a certain way up through the peaches? I know some cobblers look like the batter is spread evenly over the fruit when it is finished baking. My baked batter always rises like little cobblestones with some of the fruit poking through. I don't know if this contributes to that or not.
